Biscuit cake/Rocky road is really easy. As are flapjacks. Also take a look at the Protestant traybake thread - some of the things on there sound delicious.

You should take a look at this amazing recent thread about traybakes from Northern Ireland - lots of simple recipes as well as hilarious chat. (It does run to 40 pages though so you’re likely to need tea and a traybake or two to get through it.)

I was going to say the Protestant tray bakes, but pipped to the post Grin Failing that, I'd just go for good old chocolate crispies - you can't go wrong with them, and sell like hot cakes - even though they're not Grin

Crispie cake - equal quantities of butter, marshmallows, toffee and rice crispies. Melt the butter, toffee and marshmallows together in a pan. Add the rice crispies and mix. Turn out into a baking tray and leave to set.

Some fantastic selections! It's made me feel like I can actually make something. I attempted the tablet recipe after practically forcing dm to give me it. Completely fudged it up may have laughed out loud at that pun and if won't set!!

Good old butterfly cakes always sell - 4oz butter, 4oz sugar, 4 oz flour 2 medium eggs, mix together with a little milk if too thick, bake in cases gas mark 5/180c for 15 mins ish (depends on your oven mine cooks quick) cool, cut tops off, spoon on buttercream and replace the top cut in two to make wings, sprinkle with sprinkles.

I'm not sure if heavier fruitcakes are as popular nowadays, but if you think they might appeal, cold tea cake is very easy and very yum.

Thanks for all of the suggestions! I'm feeling very pleased with myself as I've managed tablet (not as good as dm but passable), a coffee and walnut sponge and three traybakes from the Traybake thread which was hilarious Smile
