Vegetarian shove-in-and-leave slow cooker recipe please!

I need something I can just shove in the slow cooker tomorrow and leave bubbling away all day or all afternoon, preferably veggie as Ivechad enough meat last few days..../ something like a stew/curry/hot pot?

Just fry off an onion and garlic (and ginger if you have any) and add the usual curry spices, or a pre made mix, or jarred curry paste. Add leftover veg and a tin and tomatoes. Add a can of drained pulses if you have no startchy carbs .

Or do the same but with a good tablespoon of red Thai curry paste and coconut milk instead of tomatoes.

Leave it to cook. Eat.

Veggie stuff isn’t as good for slow cookers. Slow cookers cook things, um, slowly and for a long time which is fab for getting tasty meat stews. Not so good for vegetables.
