Ingredients

  • 1 medium onion chopped

  • 1 pinch salt and pepper

  • 2 tbsp olive oil

  • 1 medium butternut squash peeled and cut into small chunks

  • 2 tsp runny honey

  • 2 cloves of garlic crushed

  • 1 tsp ground ginger

  • 1 red pepper seeds removed and sliced

  • 2 courgette cut into small chunks

  • 1 tsp ground cumin

  • 2 tsp paprika

  • 1 tsp harissa paste

  • 500g passata

  • 12 dried apricots

  • 400g tinned chickpeas drained and rinsed

Method

  1. Fry up the garlic and spices until soft
  2. Add the passata, honey and harissa and stir together.
  3. Pour all of the above in with the vegetables and pulses in the slow cooker
  4. Cook on high for four hours.

Handy Hint

Serve with couscous and top with coriander
