Anyone got a good recipe for raspberry cheesecake? There are loads online obviously but I’d like a tried and tested one. No bake ideally. Thanks.

I use raspberry jelly (reduce amount of water by half), philly, tablespoon of icing sugar AND whipping cream, though I always make mine a raspberry ruffle cheesecake. Golden syrup in the digestive biscuit base as well as butter, sometimes a small handful if coconut. I've swapped the digestives for biscoff biscuits too, lovely (even better for banoffee). Using the cream means it needs a bit of extra whipping to help it set. Top with crumbled ruffle bar.

As sent to me by Jenny:

Raspberry Oat Cheesecake
Serves 6

Base -
75g unsalted butter
3 tablespoons honey
250g plain hobnobs

Topping -
600g full fat cream cheese
225ml double cream
6 tablespoons honey
425g raspberries (thawed if frozen)
6 small sprigs of mint to decorate

Grease and line 22cm loose bottom tin. For the base - Melt together butter and honey in a pan over low heat and stir in crushed buscuits. Press into tin with back of spoon and chill for 1 hour.

Topping - Beat cream cheese until smooth. Whist double cream until soft peaks form and then stir into the cheese along with the honey. Lightly crush 375g of the raspberries (save rest for decorating cheesecake). Fold raspberries into cheese/cream mixture.

Put topping on base and chilli for 3-4 hours. Decorate with raspberries and mint springs.

(optional - stir 3tblsp whiskey into the topping mixture along with the honey).
