Pregnant & stocking freezer - ideas for veggie options & baked goods?

I'm 7 months pregnant and have a sudden urge to cook and bake, despite dreadful indigestion that means I don't want to actually eat it! I'm thinking of directing my energy towards stocking the freezer with stuff that can be easily divided into portions and reheated.

  • Any tips or links for good veggie dishes? Especially tray bake/pie type stuff?
So far my list is: Falafel Veggie burgers Vegetable lasagne Soup Dahl Curry
  • I also have a weakness for cakes/ biscuits/ bread and can get through vast quantities so I'd like to make my own - any ideas for relatively healthyish but satisfying sweet or savoury baked goods that freeze well? I usually reduce the amount of sugar and substitute with oil and wholemeal flour where possible - I'm planning on eating it all myself so it needs to be tasty but doesn't have to be perfect looking!
Current list is: Cinnamon buns Oat and raisin cookies Cheese scones Carrot cake Brownies (clearly not a healthy choice but I've heard they freeze well!)

Any suggestions appreciated!

Banana bread and flapjack. Flapjack is good for breastfeeding i think, because off all the oats.

Muffins freeze well.....

Quorn and lentil chilli
thai green curry
I make a pie which has courgette, leeks, broccoli, spinach, peas and beans in a white sauce with a cheesy mash top - you could freeze that?

Watching with interest as I'd like to stock my freezer up while pregnant (currently only 10 weeks).
What about veggie chilli? That should freeze well.
Muffins freeze really well

I made these savoury muffins for DS, and he loves them. But he’s 18 months so not massively discerning....

Slightly different approach, but I find it really useful to have parts of meals in the freezer like cheesy mashed potatoes, green lentils cooked with garlic, tomato sauce, cooked grains (rice, quinoa...), shredded roast meat etc. Gives a bit of flexibility to what you can prepare, and can be defrosted fast.
