Pork tenderloin with balsamic, fig (if there are ripe ones on the tree!) and cream sauce, dauphinoise potatoes and spinach with cream cheese. DP is home tonight after 10 days working away so want to treat him.

Sweet potato, chickpea and spinach curry. I'm making it in the slow cooker, trying to use it a lot more for convenience.

@soupforbrains, Either. If condensed, I add an equivalent amount of milk.

Also great with a healthy dose of cayenne if you like a bit of spice!

I have 2 lamb steaks which were supposed to be done with a ginger, garlic and soy sauce and stir fry, but now after looking in the fridge I want Mediterranean-ish instead so I will probably do courgette noodles, pesto, Parmesan and just grill the lamb.

Gimble I hope you like it, I sort of invented it one cold dark night when we really wanted sausage & mash but had forgotten to buy potatoes!! It's a great way to eat a lot of greens - you can replace the kale with spring greens, cavolo nero, spinach, even cabbage but we like it with kale the best. Make sure you really scrape the pan to get all the lovely sticky brown sausage bits all over the kale as well.
