Do you have one? What do you like to make in it?

I used to have a slow cooker, which was great for making stock and mulling wine.

Made chicken and bacon risotto last night and it was amazing! Used the new Jenny Tschiesche book, but switched out the chicken breast for chicken thigh fillets as I prefer them.

@saintava, no probs. Saute a diced onion, red pepper, 3 cloves chopped garlic in olive oil until soft. Add chopped chorizo, smoked paprika, a little (1/4 tsp) turmeric and fry. Then some chicken breasts and thigh meat in fairly large chunks.

Fry chicken for a few muns then add a splash of white wine and cook for a few more mins. Then add either a tin of chopped tomatoes or 4 fresh chopped tomatoes, some tomato puree, a chicken stock cube, a splash of water and some thyme/oregano. Finally a tin of butter beans.

Cook on high pressure for 9 mins. Release pressure. Then add half a cup of rinsed quinoa and bring to pressure again for a minute. The quinoa should be soft and cooked, if not use the keep warm function for a while.

Sorry it's a bit haphazard but tasted lovely.

Mine arrived on Thursday. Have already cooked a small gammon joint for lunches next week, eggs for egg mayonnaise sandwiched for todays day out and have yogurt straining in the fridge. But the star has to be the mushroom risotto we had for dinner yesterday - so quick but so creamy and unctuous. Really impressed so far

@Knittedfairies we got the same message delayed till 2 Oct. Noticed it's back in stock yesterday to be delivered next day (higher price though) so emailed Amazon asking if any change in delivery date. No - but emailed a £10 credit which will pay for some spare rings for the instant pot.

Mushroom Risotto (quantities for 2 servings):
Fry 1 chopped onion and carton of mushrooms in butter (about a tsp) and olive oil (probably used 2 tsps) on Saute.

Add 150 gms of arborio rice and stir to coat.

Add 50 ml of white wine and stir occasionally until evaporated (about 5 mins)

Add 300 mls of stock (I used chicken stock as I had made some last week) and season.

Set to pressure cook for 7 mins.

Quick release and stir in 50gm of parmesan and 1 tsp butter

It was lovely and so easy

Greek yogurt also a success. I used 4 pts of cravendale whole milk and 2 spoonfuls of aldi greek yogurt.

Didn't heat the milk or whisk the yogurt in just set the IP to Yogurt and left it overnight.

Drained it this morning using a colander and a teatowel over a large saucepan and left in fridge for 6 hours. It has made about 750 gms for about £1.40

I eat Greek yogurt every day so this will be a massive saving for me

Sorry if everybody knows this already, but the livesimply.me blogger has useful IP recipes. It is American, but it uses normal fresh ingredients and doesn't call for a couple of packets of instant soup mix to be added at any point. The "Jump to recipe" button is handy to cut through the blogging stuff, if you just want to get on and cook, and there's a print button.

I used a red and wild rice mix (although it says to use only wild rice) because I couldn’t find pure wild rice and had the red rice mix to use up.

I also didn’t do the butter / flour / milk thickener - we had some double cream left over so I used that instead.

Also the recipe said to do it on pressure cook high for 45 minutes but that seemed very long to me. I used the soup / broth function (30 minutes).

That looks lovely. I made sweet potato and carrot soup with the stock from the gammon I cooked last week. Planning macaroni cheese, beef casserole and pulled pork on the weekend. Any good recipes to shareable?

I’ve parboiled my tatties for roast potatoes and it now has chicken casserole in it. Love my instant pot!

I’m one of the lucky ones that got it for £69.99 a few years ago. It better bloody last forever as I’m not paying almost double if it breaks!

I did baked potatoes for 18 mins on Pressure they weren't really done and had to be finished in the microwave, how long should I have done it for?
