Bean burgers
Drain Tin chick peas, tin butter beans and smash in a processor or mixer.
Add chopped onion and sweet corn
Flavour with mint sauce &tumeric
Shape into burgers on a greased baking tray.( use a handful of flour if they are runny)
Bake 180 fro about 10 mins,
Add sliced cheese( halomi or feta or cheddar) and Bake for another 10 mins and serve with salad (and sweet chill sauce)
Mexican beans
Fry onions, chilli, garlic( and peppers if you want)
Cumin, turmeric, half a dozen tomatoes,
When soft Finally add
Tin black beans
Bunch of coriander and heat through
Serve with avocado, grated cheese, tortillas or nan bread
Lentil and cheese salad
Black lentils ( or tinned mixed beans) work best. Cook lentils up ( and add some spinach if you fancy)
Whilst cooking finally chop onion ( use spring onions if you prefer a gentler taste)and peppers and tomatoes and soak them in loads of balsamic vinegar and salt
And prep some couscous
When lentils are ready, put lentils and a little grated or crumbled cheese on the couscous, top with the salad mix and drizzle with a dash of lemon and olive oil ( or flavoured oil or sprinkle of fresh herbs)
Bean stew
Gently fry onions and peppers …use a bit more butter /oil than usual
Stir in tin mixed beans with liquid and whatever veggies you like ( spinach fresh or frozen is good, if it's carrots or such then grate them or be patient with the cooking time )
Flavour with ..mixed herbs and salt. Or cayenne and nutmeg..whatever ( you can do a meat version with a very small bit of chorizo)
Serve with Couscous or rice
Spinach and walnut lasagne
Instead of a meat sauce for lasagne , gently fry onions one or two tomatoes and garlic, stir in loads of spinach. Once it has vanished, crumble in walnuts. Flavour with nutmeg ( and dash of cayenne if so inclined) would
Or use the same mix with a little feta cheese on pasta or to make little pies.
