Hi,

My husband and I are cutting down on meat but I often struggle to know what to cook for dinner! I've been converted to Quorn and enjoy the mince in bolognese, lasagna etc. I also like Linda McCartney sausages and her other bits and bobs. However, I realise that these are meat 'replacements' and aren't particularly cheap!

What are your staple veggie dinners? What veggie dinners do your kids enjoy eating?

Yes, @SentToTheSynByn still experimenting with different cheeses, amounts of lentils etc but it's always been nice and very easy.

I make Delilah’s cottage pie, but swap mince meat for tinned green lentils & chopped aubergine, the cinnamon is the secret ingredient. I usually just place normal mash onto

You can split the amounts into two dishes, as no meat involved the 2nd dish will keep in the fridge for 5/6 days wrapped in clingfilm

Serve with veggie gravy

Placemarking I love thai green curry with tofu loads of veg and either sticky or rice noodles (cookie and kate recipe). Also noodle soup with smoked tofu (wagamama recipe), egg fried noodles (just the same as egg fried rice but with noodles instead). I love the Covent garden soup book for lunches with some fancy bread. And marmite pasta (nigella recipe)
Rachel roddy has some great recipes in the guardian. For veggie curry I'll use tinned chickpeas tomatoes coconut, some thing green and whatever veg I have to hand plus I like to serve with cumin roasted potatoes and cauliflower, rice, naan (morrisons clay oven is the best) poppadoms and dips it's a lovely replacement for a sunday roast plus loads of leftover for lunches during the week. However if you fancy something a bit more traditional I love the quorn roast (I havent hadn't chicken in about 14 years though so it might not be up to your standard) and beef bistro is veggie. So are most bacon rashers crisps Smile
