Courgettes, roasted with tomatoes and a boy of olive oil, and stirred through risotto, is absolutely delicious!

I grate courgettes...squeeze out the excess water...then mix with feta, egg, flour, milk, chilli, mint and fry in little pattys.

My favourite pasta recipe _courgettes cut into fine long matchsticks, fry, add parmesan, good squeeze of lemon juice and lots of chopped mint. S&p. Toss through cooked linguine. More parmesan.

We had Yotam Ottolenghi's courgette and herb pie last weekend. It was a bit too lemony for me so I think I'd leave the lemon zest out next time. But otherwise delicious.

Nigella's tortelloni minestrone has courgettes and green beans in. I find spinach and ricotta tortelloni a bit bland so I usually use a different flavour - goats cheese and pesto is really nice.

Garlicky beans. Boil green beans until tender, drain, gently fry in a little butter/olive oil add a couple of crushed garlic cloves, toss together until garlic is lightly golden, add a squeeze of lemon.

ok Im going to let the side down here but one thing.when you've grown those bad boys fresh do try them as is.dwarf beans home grown are gorgeous flavour just as veg.
courgette,carrot onions and garlic roasted.courgettes roasted are lovely

cut courgettes in half then bake them with a breadcrumb cheese,herb and chorizo stuffing

Oh yes - I like them 'as is'. Lots of great suggestions.

My confession is that if the courgettes grow too big (hiding under a leaf)I roast them and give them to the hens. Lovely treat for them!

Block of puff pastry rolled out to £1 coin thickness. Mark out 2cm edge with sharp knife without cutting all the way through. Prick the middle bit with a fork. Cover with pesto, crumbled feta and courgette slices (i griddle them first). Brush the edge with milk. Bake for 20 mins. Delicious.

Oo Purple I do something like that with red inions - never thought of using courgettes!

We had a courgette gratin tonight. Courgettes sliced, stirred with some olive oil and baked while I made an onion, garlic, herb and tomato sauce. Then I poured the sauce over the courgettes and topped with breadcrumbs and parmesan and baked until crispy. Delicious.

Going to do something with green beans tomorrow.

I've also got a tonne of blackcurrants.

I cut the courgettes into ribbons with a mandoline or veg peeler then roll them around cubes of feta that I've marinated in olive oil with thyme, lemon zest, garlic, pink peppercorns, crushed bay leaves, and smoked paprika. you can then put them on skewers and barbecue or grill them.

If you grate courgette you can fry it off in a little oil and add to meatballs to bulk them up and keep them moist.

Cold courgette soup with mint is also lovely - steam cubed courgettes then blend with stock lemon zest and lots of fresh mint.

Courgette flower fritters are really nice but not an everyday thing though - put a bit of mozzarella inside the courgette flower and if you have any in your garden a nasturtium flower and then you can batter them in beer batter ( plain flour, salt, beer, spices if you want) and fry them.

Courgettes fries are also nice, cut the courgettes into fries, roll in some beaten egg white and then coat in parmesan and bake in the oven.

I'm very jealous of your blackcurrants. Blackcurrant crumble is my favourite pudding, but I'm lucky if we get enough blackcurrants for one small crumble a year!

I made cretan boureki yesterday to use up some of the courgette glut.
It's like a potato daupinous and is totally delicious

Chop up courgettes with a pepper and some cherry tomatoes. Put in the oven to roast.
Put some jasmine rice on to boil.
Once veg are starting to brown stir in a tin of coconut milk and some Thai curry paste. Add the beans. Pop back in the oven for 10 minutes or so.

Bloody lovely.

I had it for tea tonight.

If you do it as is it’s vegan but I’ll often add some grilled chopped up halloumi cheese. I guess you could add chicken too.
