courgettes and/or dwarf green beans - recipe ideas?

Both doing well in the garden. I think we may be eating a lot of them.

What are your favourite recipes?

Harry Eastwood has an amazing recipe for courgette cake with strawberry jam and lemon icing (I think she calls it a birthday cake) which I have made as cupcakes. Very fresh tasting and light.

This is nice but more a bake than lasagne using thin courgette slices instead of pasta. The smooth butterbean and leek sauce +/- goat's cheese is really creamy

I also like courgette, pea and mint soup. It's uber quick. Just start with softening an onion or a leek or even just spring onions, add courgettes, peas and stock, cook a bit (5-10 minutes), add fresh mint or even mint sauce , blend.

Courgettes now in full flood.... I only have to turn my back for a moment and they have gone from tiddly to ginormous
