Hello all,

For years and years I have been trying to find a Kebab chilli sauce recipe and have asked my local kebab shops and they either wont tell me or quickly tell me what they use but then I mess up the ratios and portions as they dont explain that part and it doesnt work.

There are many many many on google and youtube etc and none of them are any good or they come a little close but not very close.

What I have discovered is what they DO NOT USE which is:

Ketchup
Tinned Tomatos
cream
yogurt
sugar
mint
fresh tomatos
mango chutney

What they do use or might use is:

Plain Pizza sauce or plain Passata
Tomato Puree
onion
celery
water
white cabbage
carrot
fresh chillis

---------------

Now most places in Scotland make a terrible chilli sauce using ketchup so for sure dont need that recipe. But most places in England make a nice chilli sauce and really hoping someone on here works in a Kebab shop or knows someone who does and can get an exact recipe.

Is this some sort of weird SEO thing?

Thanks so much for the supportive replies Mummyoftwo91, ThomasShelbysBunnet , Plumsofwrath and northbynorthwesty and LemonScentedStickyBat.

Hopefully I will find the holy grail chilli sauce. I know the area I am from orginally in England most of the kebab shops would make the most amazing chilli sauce you can imagine.
Many years ago one of the kebab chefs was kind enough to show me how he made it after I complimented him and asked him how he made it and he invited me into his kebab shop kitchen and showed me as he was just about to make a new batch and the shop was quiet, he was a delightful older Turkish man, this was like 15 years ago and I can not remember how he did it unfortunately.

I've contacted the shops back where I am orginally from in England and they either won't tell me and say they wont give it out or their chefs too busy or not available. A couple of them did say very breifly but were busy and couldnt explain properly. they just all just said it was passta or tinned chopped tomato, water, fresh chillis, onion, parsley, mixture of herbs (what herbs I dont know). But its a bit vauge and its very important to know how its applied and ratios. So thats why I was on the holy grail of an actual recipe. I have tried to make it 100's of times and everytime have ended up throwing it out as ended up being terrible :(

Welll maybe on the 1000's time I might manage it or eventually find a recipe on the seach of the holy grail chilli sauce lol. Im determind to find it or figure it out one day lol. Thanks all so much!

DontDrinkDontSmoke · 08/05/2018 17:53

I made it a few years ago following a recipe I found online. It was fab but I can’t remember the recipe

nowtheretwo · 08/05/2018 17:56

Mummyoftwo91 nothing much just something said not very polite. Anyhow think this thread should be closed or something, its ok if everyone is polite though.

I have read the word chilli so often now that it's starting to look wrong....🌶🌶🌶🌶

This is an old thread but thought I'd post. I'm from Newcastle and I can confirm what the op says about fresh sauce, you can tell it's fresh made because you will never find two shops here that have the same tasting sauce, they are all very individual. Also if you leave the sauce to sit in the carton too long the water will settle to the bottom untill it's remixed, this implies no binding/thickening agents have been used. I've tasted that big bottle of sauce above that is sold in B &M's and such places and it tastes nothing like the kebab shop chilli in Newcastle.

AgentProvocateur · 28/03/2019 05:44

I clicked on this thinking that the OP had found the recipe and was back to share it! Wink So disappointed that there’s no sauce update.

A new kebab shop opened near me and I swear there was a tiny bit of unblended celery in it.

azulmariposa · 18/04/2019 22:49

My local kebab shop chilli sauce is homemade. It reminds me of something I had in Tunisia, which was the sauce served with yogurt and flatbread. I can't remember what it was called. It was delicious!
Anyway, I think my locals chilli sauce has no tomato at all. It's red pepper, carrot and possibly some celery. It must have lemon and olive oil in too. It's not too spicy and full of flavour.
Bugger. Now I want a kebab.

I know this is old but I swear by this one. 3 chillies, juice from 1 lemon, half a white cabbage, 1 onion, full tube of tomatoes puree, 2 garlic cloves, half a tin of chopped tomatoes, salt and a pinch of sugar, keep adding a bit of water at a time when blending till it's the right consistency Smile
