Anyone work or know anyone who works in a Kebab shop and can get a kebab chilli sauce recipe?

Hello all,

For years and years I have been trying to find a Kebab chilli sauce recipe and have asked my local kebab shops and they either wont tell me or quickly tell me what they use but then I mess up the ratios and portions as they dont explain that part and it doesnt work.

There are many many many on google and youtube etc and none of them are any good or they come a little close but not very close.

What I have discovered is what they DO NOT USE which is:

Ketchup
Tinned Tomatos
cream
yogurt
sugar
mint
fresh tomatos
mango chutney

What they do use or might use is:

Plain Pizza sauce or plain Passata
Tomato Puree
onion
celery
water
white cabbage
carrot
fresh chillis

Now most places in Scotland make a terrible chilli sauce using ketchup so for sure dont need that recipe. But most places in England make a nice chilli sauce and really hoping someone on here works in a Kebab shop or knows someone who does and can get an exact recipe.

I think it will depend on where the owners are from. Most in Manchester are Libyan so will make a version of harissa . But I don’t know about the NE

randomly pick a few kebab shops between those areas and call them and ask if they make their own chilli sauce fresh in house and most will confirm they do.

Most will say they do. That is not the same as confirming it.

The one by Ange, but it was too tomato tasting so I added water but then it ended up being too bland and just not nice....but Im really no good at cooking.

SoupDragon look if you ask them do you make your own chilli sauce fresh in the shop or do you get it in ready made and they say "No we make it fresh in the shop" then I am satisfied they make it fresh, ofcourse they could be lying but I tend to believe most people are honest.

My fil owns a Turkish restaurant/kebab shop, he uses fresh parsley, onion, chilli, garlic, fresh tomatoes, white wine vinegar, salt and pepper. I make the recipe myself at home and it's delicious

I live in the North East and every kebab shop Ive been in (rather a few) use these.

Seriously, shops round here do not make their own.

NapQueen the area I am from most make their own, the odd one does not and I check before I buy from them first if they make it fresh and if they dont then I dont buy anything as I dont like that wholesale chilli sauce.

Fact is some places make their own fresh and some get it in from a wholesaler.

He didn't give me ratios I just kind of winged it till it tasted right! Also depends how hot your chillies are/how spicy you like it! Once it's made it lasts ages in the fridge. Hope that's helpful!

Agree that some areas have restaurants where they buy in the sauce, where I'm from every shop makes their own even the kebab vans in the town Center make their own. I think it's just a regional thing

Mummyoftwo91 I double agree, so strange how one town/city most kebab shops will all buy the chilli sauce in ready made and a few miles away in another city/town most kebab shops make their own. It is just a regional thing.

I wondered if it might be the pomegranate molasses in the recipe I found that might make the difference, but actually it sounds like you’ve found the basic recipe and it’s just in the ratios now!

My FIL also Turkish, btw but I wasn’t lucky enough to get a FIL with a kebab shop!

Can't wait to try Mummyoftwo91 FIL recipe!! Probably take me a good few times to get the ratios right as Im no good at cooking, although I can make good toast, well sometimes lol :P

I found this one on google and its pretty good, but just to tomato tasting though.

I worked in a few kebab shops when I was young and the old recipe was always a blend of white cabbage, onion, chillis, passata and lemon (you can also add a a bit of garlic) I make a batch every week; healthy and super tasty.

small white cabbage diced (or half a medium sized one)
Large white onion diced
couple cloves of garlic
300g passata
juice of 1 lemon
2 large red chillis
pinch of salt

Pop everything into a blender until smooth.

I have a suggestion.. you could go to your favourite kebab shop and ask them to sell you a tub of their (freshly made) kebab sauce? I’m sure they would oblige if you are prepared to pay.

MyDcAreMarvel my goodness me....I simply ask if anyone had any recipes for the chilli sauce from certain kebab shops that "DO" make their own chilli sauce.

OK I understand if some people do not believe any kebab shops in the whole of the UK do not make their own chilli sauce and if they think this thats fine. However, I know for a fact that many do in certain parts of the UK make their own chilli sauce, infact some of the people on this thread have confirmed that they have relatives who own a kebab shop and they make their own chilli sauce.
I have no doubt some kebab shops in some areas do not make their own chilli sauce, in fact I know this for certain as I have seen a big bottle of Crucials chilli sauce on the counter but I also know for a certain some kebab shops do make their own chilli sauce as I worked in catering when I was younger and have know people who work in Kebab shops who confirmed they make it fresh every week.

Some people on this thread have given me some great chilli sauce recipes from a Kebab shop also.

So please I think an admin needs to close this thread now as its become very silly.

I just admire your commitment and dedication to finding your perfect kebab sauce. I mean that seriously - this is old fashioned, recipe hunting. Just because it’s a poster on MN, people are poo-pooing it. If it were some fancy chef writing up a fancy cookbook or blog, with all this as the preface to the actual recipe, people would be paying good money for it. Isn’t this exactly what the likes of Felicity Cloake do??

Good luck on your hunt OP. I’m not a kebab fan but the last recipe sounds delicious, I think it could be used in many a dish.
