Potato Salad recipe for buffet

Hi all.

DP has organised an impromptu family get together for a large amount of people together. Plan is a cold buffet - does anybody have a tried and tested potato salad they could share please? Losing my mind with the amount of suggestions on Google.

Steam/boil new potatoes. Cool.

Halve/quarter and put in bowl.

Add enough mayo to coat.

Snip in a few spring onions and stir through.

I always do mayo, salad cream and English mustard, if I can be bothered and it's for meat eaters I'll try off some smoked streaky bacon to sprinkle over the top.

Mine is identical to Tittys but I add crispy bacon. It's addictive and what my 14 year old wants for her birthday dinner.

Mix mayonnaise with some white wine vinegar, wholegrain mustard and black pepper to taste and mix in the cut up cooked potatoes. Snip a whole load of chives over the top.

Titty's sounds like what I make. I sometimes buy the tiny little potatoes to minimise the amount of chopping. I certainly don't bother to peel or scrape them. The skins are very thin and I like the way unpeeled new potatoes look. I season it generously with salt and black pepper. It's best at room temperature, best of all served while the potatoes are still warm from cooking, but that's tricky when getting a big buffet together. I find fridge cold potato salad disappointing.

Mine is similar to Tittys but I add chopped boiled egg and sliced celery for that added crunch and finish with fresh parsley

I use a herb vinaigrette made using lots of fresh herbs chopped finely (or whizzed in blender) with a simple French dressing and touch of lemon. I add finely sliced radish and scallions to slightly warm potatoes and stir through.

If you’re not a fan of mayo you can make a potato salad using a vinaigrette instead.
I use red wine vinegar mixed with olive oil and a bit of Dijon mustard. Whisk up and pour over boiled potatoes, add some chopped spring onions or chives

I add chopped hard boiled egg and spring onions too. Best at room temperature
Quite peckish now despite being full of cold

I use creme fraiche or sour cream with chives for potato salad. It's also nice with garlic dip.

Yep very much like Titty's however I mix my mayo with Greek yoghurt and snip in a handful of chives.

Cook potatoes, mix mayo wth a spoonful or two of vinigrette and one of water, stir through, add chives to the top.
Plain mayo can get very claggy when it's left to sit, the rest just makes it more spoonable.

Hard boiled egg
Mayo
Spring onion
Whole grain mustard
Finely chopped celery for a little crunch

crumbs what herbs do you use?

I do salad potatoes, green onions, an egg if I fancy it on the day. Dressing: mayo, white wine vinegar, yoghurt with more yoghurt than mayo. Salt and pepper.

Mustard would be good in it too.

Very hard to go far wrong.

a little mustard.cooked potatos until al dente.chop in some apples.mayo to coat,squueze of lemon juice or dash of vinegar.chop in some chives.will sometimes if time dice some red onion or spring onion in too.depending on taste and whos coming.

Vegan version (that meat eaters will demolish)

boiled whole tiny potatoes
dash of oil
big handful of chopped spring onions
most of a jar of wholegrain french mustard
stir together when still hot
