DH accidentally bought 6 bags of potatoes

He did the online shop. I now have 6 bags of new potatoes. Can you give me some suggestions for what to do with them? I normally just season and serve with veg and fish or chicken dishes. TIA

I do and they keep well for a couple of months in the bottom of my fridge

Putting them in the fridge makes them think winter has been and gone and they sprout earlier. Also, putting 6 bags of potatoes in the fridge, just wastes space and energy. They are more than happy in a cool dark place well away from plastic.
