So basically I am trying to lose a stone before Christmas, 6lb gone so far. I have planned Christmas Day/Boxing Day food, but want to make an decadent meal that I can really look forward to on one other day over Christmas.

I don't eat meat, fish or eggs, but love cheese, mushrooms, spinach, chickpeas.

So please share your most indulgent dishes Smile

Stuffed mushrooms on a bed of rocket with looooads of balsamic glaze!

KittyLover91 · 13/10/2017 12:11

Have you looked for vegetarian wellington?

I watched an old rerun of GBBO last night and someone did a veggie one, looked quite good!

JustTheWayYouAre · 13/10/2017 12:16

Oo thanks, garlic mushrooms on toast to start.

Not really into puddings

The thing is I spend so much time planning and cooking for other people, I run out of ideas.

A whole Brie cooked in filo pastry.

My God.

GemmaB78 · 13/10/2017 12:22

Another vote for vegetarian wellington. Mushroom, butternut squash and chickpea is my favourite.

KittyLover91 · 13/10/2017 12:36

Glad to be of help Smile

This is making me hungry and I'm stuck at work with a cuppa soup and a stick of cheese, boohoo!

Big fan of the garlic mushrooms on toast. Thick, fresh bread and cheese is a must though!

Im now drooooling

MotherOfBeagles · 13/10/2017 12:37

Doesn’t look nice at all but my step dad makes this for my mum and I (veggies) at Christmas and I look forward to it all year. Honest to god I made him make me one for Boxing Day the year I went to my MILs because it’s amazing!!

Spinach and lentil roulade 🤤

It's a gorgeous recipe. It used to be my Christmas dinner in my vegetarian days. I still cook it and look forward to this one.

KittyLover91 · 13/10/2017 12:46

Im awful at sharing when it involves cheese Hoof haha!

BertrandRussell · 13/10/2017 12:51

I wish you were a fishandchipocrite not s proper vegetarian. I'd tell you to google Jansson's Temptation - can't link on my phone...!

Deploycharitygoats · 13/10/2017 13:01

Butternut squash, mushroom and spinach lasagne. It's completely over the top and gorgeous and rammed full of garlic

It's from the Crank's Bible book. I can't find the recipe online, but it's basically:

Butternut squash sliced and slathered with pesto then roasted (layer 1)
Loads of mushrooms cooked in garlic and creme fraiche (layer 2)
Garlicky, peppery wilted spinach with more creme fraiche stirred through (layer 3).

Keep a bit of each layer back then put all remnants on the top and smother with cheese. Bake, devour, stink out the neighbourhood Grin

JustTheWayYouAre · 13/10/2017 15:09

Sorry, work called.

So many gorgeous recipes. I'm definitely leaning towards puff pastry. Could I use that instead of filo @CrabappleCake? And do I have to share?

No to the roulades thanks as I don't eat eggs, but will save the recipes for my veggie dcs.

Not a huge fan of goats cheese, probably because it's over used by unimaginative chefs Hmm

Baked Camembert
Macaroni cheese
Broccoli in blue cheese sauce
Anything in filo pastry
Nut roast with all the trimmings
Haloumi and beetroot salad
Peanut butter Thai red curry with red veg (sweet potato, butternut squash, red pepper, carrots, red onions)
Buddha bowls
Mushroom stroganoff
Vegetable lasagne
Vegetarian moussaka
Spinach and ricotta cannelloni

PosieNarka · 13/10/2017 17:52

Delia's spinach and ricotta lasagne (the recipe uses four types of cheese, not just ricotta).
It's a complete faff to make though!

NiceCuppaTeaAndASitDown · 13/10/2017 17:59

Sweet potato gnocchi with blue cheese and walnut sauce. Heaven!

FusionChefGeoff · 13/10/2017 18:04

Jamie has an incredible veggie lasagne with butternut squash, ricotta, spinach, cheese etc.

I’m not veggie but make a huge batch every now and then for freezer food. I’ll try to find it

InDubiousBattle · 13/10/2017 18:05

Butternut squash canelloni. Boil cubed squash (just cover with water)with chopped rosemary. Gently fry red onion with a bit of balsamic then mash up with the squash and use to fill canelloni. Cover with and rich, garlicky tomato sauce and top with mozzarella and mature cheddar. Bake. Eat with crusty bread. Particularly good as you can make the squash mixture and tomato sauce early and freeze it so not too much fuss over Christmas!
