What is your favourite, most indulgent and decadent (vegetarian) meal?

So basically I am trying to lose a stone before Christmas, 6lb gone so far. I have planned Christmas Day/Boxing Day food, but want to make an decadent meal that I can really look forward to on one other day over Christmas.

I don't eat meat, fish or eggs, but love cheese, mushrooms, spinach, chickpeas.

So please share your most indulgent dishes Smile

I'm not veggie myself, but I put cheese (normally a cauliflower cheese sauce), pasta, mushrooms and either broccoli or spinach all together to make a gooey, healthy-ish dinner!

I’m also usually not a fan of goats cheese but had an amazing meal in a pub recently - a rich tomatoey mixed bean cassoulet with a rounded portion of crispy bubble and squeak, a round of goats cheese and some huge beer battered onion rings placed on top- it was one of the nicest things I’ve ever eaten!

Not very Christmassy but beer battered halloumi is a big treat here.

i would LOVE to be served a mushroom wellington.

I had one in a restaurant a while ago and the sauce was GORGEOUS. It was cocunut and whiskey and a bit of the liquid from the mushrooms drained off earlier added in to it I'd say. That sauce....... wow

I want to replicate it at home.

My mum has that cookbook. It's a worn out paper back book! I must make that wellington. I think my mum used to make it with home made 'brown' pastry. It was delicious.

@lastqueenofscotland Saag paneer is for life, not just for Christmas, anyway paneer is Indian cottage cheese, so that's diet food right? It's a weekly event in the Just household.

We always have a lot of people and a mix of veggies/non veggies at Christmans so I tend to do a veggie entree which works with the same side dishes as the meaty entree.

The Rose Elliot pate wellington works really well, as does the Sarah Brown mentioned above. (Sarah Brown also has a great recipe for a rich mushroom pie maid with whole mushrooms but I can't find it online). I also love this raised vegetarian pie. It has eggs for binding but works fine with chickpea water (I've made a vegan version). All three fit well with a savoury gravy/sauce and the traditional veggie sides.

If you don't have a mxed audience why not make a paneer jalfrezi with a range of side dishes? Spicy rice, sag aloo, bhindi bhaji and mango lhasi? :)
