We had halloumi and veg skewers, dead easy, just courgette and peppers and halloumi with olive oil and herbs over, put on skewers and grill for 10 mins.
Serve with salad or rice or potato wedges. Yummy!

Pizza toast - literally 5 minutes. Make toast in toaster whilst grill warms. Spread with tomato purée and sprinkle with grated cheese/chopped ham/pepper/anything you've got to hand. Grill. Eat.

Smoked Sausage, sliced a Fried until just crisp. Add pot of cream, cajun seasoning and handful grated parmesan. Stir into cooked pasta. Amazing.

Chicken thighs (bone in) at least two each, sliced chorizo, shallots quartered, red pepper sliced, as many cloves of garlic as you can be bothered to peel, celeriac peeled and sliced into smallish chunks.

Cover in tinfoil, back in oven gas mark 6 for an hour, remove tinfoil fir last 20 mins.

Effortless and Delicious.

I buy pork mince as it's cheaper than beef.

Add chopped onions and tarragon for tasty burgers.

Tonight I put feta and mint in.
Shaped into small meatballs to have with pasta and tomato sauce ( tinned toms, onion and oxo cube/ garlic/ Worcester sauce or whatever else is to hand). Bit of asparagus and salad for me with it. Really nice.

Cook cous cous (packet if you like, some veg in it if you like). Spoon onto a piece of lightly oiled tin foil. Piece of salmon (skinless or not, but if skinned put it 'sideways') on the top. Cover salmon with sundried tomatoes from a jar. I sometimes put a few small slices of fresh chilli in too. Scrunch foil above salmon, sealing it but giving the fish a bit of space. 25 mins in the oven. Serve with salad/green beans/roasted veg/whatever you fancy.

Paprika Pork

Fry some onions and peppers add in chopped Pork. Sprinkle 2tsp of paprika over then add 300mls of stock and bring to the boil. Summer with a lid for 30 minutes or all liquid is gone. Take off the heat and add 3 table spoons of fromage frais and serve with rice and veg.

Mine is new potatoes, cherry tomatoes, butter beans with garlic, stock and a herb, thyme or basil or rosemary depending on my garden/time of year. Boned chicken thighs on the top, trimmed of all but a bit of skin so that the skin is not submerged in the stock, cooked in a low oven for 90 mins or more depending on what I am doing. Only one dish too 👍🏻. Usually with salad or something green.

Pesto is your friend. On salmon fillets/chicken and popped in the oven for 20mins
Corned Beef Hash. Cube 4big potatoes and chop and onion and simmer in pint and half of beef stock.25 mins later stirin corned beef and then crisp under the grill.
Chicken korma...fry off chicken pieces in a litte oil, cumin/tumeric/curry powder and garlic. Add coconut milk , tom puree and creme fraiche.
Homemade wedges. Potato or sweet potatoe. Cut up, mix in oil and salt and pepper. High oven for 25 mins

Another pasta one, hugely lazy. Garlic mushroom pasta - fry chunks of mushroom in butter and garlic puree, add a tin of cream of mushroom soup, serve over the cooked pasta of your choice. If I've got it, and can be bothered, I add a chopped up rasher of bacon.

My other "can't be arsed" meal is a ploughman's lunch.

Greek salad - peel and cut up a whole cucumber and lots of tomatoes, cut up a block of feta cheese, add black olives, lots of dressing.

Grin I was just thinking exactly the same thing! If it needs marinating/simmering/dicing etc. that's definitely making an effort by my (low) standards!

Marinate chicken in sriracha chilli sauce. Fry off, add double cream and tons of parmesan. Mix through linguine and top with cracked pepper and serve with garlic bread and maybe some rocket.

Last night we coated chicken breast strips in peri peri sauce and served in warmed pittas with coleslaw and leafy salad. Think it was the easiest meal I've ever made!

Easy and tasty - tortilla into a dry frying pan, top with cheese, chopped peppers and pepperoni or other cooked meat. Add more grated cheese and another tortilla. Once the cheese melts a bit to stick it together flip it over til both sides are a bit toasted. Once done, plate up, slice with the pizza cutter and dip into shop bought guacamole. These are Quesadillas, I love them, I do Cooked chicken, chorizo, jalapenos etc in mine and dip in soured cream.

Minced lamb fried with red onions, garlic, chilli, oregano, mint, cinnamon and passata. Once cooked add 250g orzo to cook in the sauce. Serve with parsley and chopped feta. Bloody gorgeous!

Chicken and sweet potato curry

Fry an onion and pepper until slightly softened, add diced chicken breasts, once browned add 2 tablespoons of Madras curry paste, and 2 chopped sweet potatoes. Stir in a tin of coconut milk, 200ml of water and a chicken stock cube. When the potato is cooked mash some of it down into the sauce with the spoon.

Lovely and easy! Can add peas, mushrooms and whatever else takes your fancy.

500g pork mince browned and fat drained. Add in a fajita spice mix packet, I usually add a little paprika and some chilli powder, and some chopped peppers. Fry off for a min or so, then add 500ml passata and a pinch of sugar. Simmer on low for 5-10 mins while you boil some fresh tagliatele. Once its drained stir some plain yoghurt into the sauce to taste, and then stir through the pasta. Or if you have a fussy family like I do, plonk a spoonful on top/on the side of the pasta.

We call it fajita pork and its a favourite here. I like it because I can easily add extra yoghurt into the kids portions and keep mine and DH's spicy.
