What is your favourite cake?

I bake a cake every week, quite a big one, 5 egg mixture. Usually a Victoria sponge or a chocolate cake. 12 slices, it sits under a dome and DD and DH eat it during the week.

Has anyone got a different 'ordinary' cake recipe they love that they can recommend? I am a bit bored of making the same cake - not coffee and walnut as they won't eat it.

You could make your Victoria sponge with lemon peel in the mix and lemon curd in the middle.

That sounds nice, I think I might have lemon curd in the pantry. Would you still include vanilla buttercream in the middle with that?

It's nice with vanilla buttercream and lemon curd, or just lemon curd. It depends on the mood I'm in (and how much of a rush!).

I do chocolate butter cream and raspberry jam in my chocolate cake. Neither of them like a lot of icing so I never do anything but a 1cm layer in the middle.

I do make carrot muffins for breakfast sometimes but that has reminded me that I took a photo of a parsnip cake recipe in a good housekeeping mag when I was at the hospital last week Grin, I will have a look at that.

You wouldn't believe that I have got 4ft worth of cookery and baking books in my kitchen, just lacking inspiration.

Gingercake with cherries and sultanas or raisins.
Flapjack
Chocolate tiffin
Fruity cakes - individual. Basically vanilla sponge mix and add sultanas, cherries.

I would love the ginger cake (I don't have a sweet tooth so only have one piece when it is just made) but I don't think they would. I have got all the ingredients though so could make one.

Jamie Oliver's lemon meringue cake is outstanding. I leave the merengue off the top because it makes it too seeet. Without it it is delicious and beautifully sharp and the buttercream is the best I've ever made

Purple - I am going with your lemon zest/curd. Is it just the zest of one lemon in the cake, or two, biggish mix - 5 eggs 10oz everything else.

I've got a carrot cake in the oven at the moment. I kid myself that carrot cake is healthy. Going to do a honeyed cream cheese icing.
