What is your favourite cake?

I bake a cake every week, quite a big one, 5 egg mixture. Usually a Victoria sponge or a chocolate cake. 12 slices, it sits under a dome and DD and DH eat it during the week.

Has anyone got a different 'ordinary' cake recipe they love that they can recommend? I am a bit bored of making the same cake - not coffee and walnut as they won't eat it.

The icing is the best bit, creamy goodness. Not too sweet.
I also love courgette cake, maybe with a lime cream cheese icing. I don't have a recipe to hand but you should be able to find one online easily enough.

Victoria sponge with an elderberry fresh cream and gooseberry jam, the best! Dust top with icing sugar.

Mine is in the oven - terrible storm here so I am going to make cheese scones and a focaccia while I am at it.

DH makes a lovely banana and walnut cake and a sort of flapjack thing with a layer of jam in the middle. From the Williams Sonoma baking book.

Cherry cake.
Other regular bakes in this house are muffins - usually chocolate chip or cherry, chocolate chip cookies, chocolate brownies, and melting moments (I see a cherry and chocolate theme emerging...)

Grin, DH just came in with my cake tester in his shirt pocket, announcing that he was the cake tester not the skewer thing so I think you might have competition toddler.

Thanks for everyone's suggestions, I will definitely try some of them.

I went with lemon buttercream in the end after looking at the primrose bakery book while I was waiting for the cake to come out of the oven.

My family now have the agonising wait for the cake to cool Grin. Anyone would think that they were hungry or never get a home made cake.

I do a basic Victoria Sandwich mix but I do it as an all-in-one. For a two egg mix I add grated find of a lemon (or orange) plus dessertspoon of juice to the batter. Delia says to add rind and juice, in her Complete Cookery Course, so it's definitely OK!

I do glacé icing on top, made with lemon juice so it's not too sweet. Lemon curd in the middle and a layer of cream as well if I've got some.

I LOVE lemon cake.

👍🏻👍🏻 to the cake. My lemon curd came from a local farmers market and is lovely (hadn't tried that one before), very lemony and not sweet.

I also made 'vintage cheddar, mustard and walnut' scones - they are lovely.

Bread on the go, I will make hummus in the morning and we will add some fruit and take a picnic as we are cycling all day. Job done.

One of my friends makes her own lemon curd and it's always delicious. Maybe I'll try it this half term.

Those scones sound fab too. Cheese scones are some of my favourite things.

I do a lemon sponge with lemon zest and a little lemon juice in the cake batter and sandwich it together with a couple of spoonfuls of lemon curd mixed with cream cheese. Quicker than making buttercream.
