Best vegetarian sandwiches...

Just read the 'greatest sandwich in the world' thread, and am now craving a vegetarian equivalent. I have a few strong contenders, which I'll put in the comments.

Hit me up with your 'world's greatest vegetarian sandwiches', Mumsnet!

Pitta or flatbread stuffed with roasted peppers, spinach, feta cheese and butternut squash

Or a good old cheese and pickle

1. Houmous with roasted slices of aubergine. This is also delicious with some bits of fresh basil torn and sprinkled over it. Lovely with the Moroccan houmous from Sainsbury's...

1. Roast some tofu slices with sunflower oil, tamari or soy sauce, and engevita yeast flakes. Slice of bread, bit of mayonnaise, roast tofu, tomatoes and leaves on top. Yuuuuuuummm. It's like a posh, more delicious ploughman's (sorry, purists).

Veggie or no, there is no sandwich better than cheese and marmite.

Houmous, fried red onion, and rocket.

I wish there was a 'like' button!

Tomato and mayonnaise.
Egg mayonnaise.

There could be a theme developing here!

For something a bit retro, sandwich spread!

Homemade curried coleslaw with cream cheese and mango chutney.

Cream cheese, toasted pine nuts and grated carrot. Divine.

Or, on a slightly different tack, peanut butter and jam

Actually in summer there is nothing better than fresh tomatos with lots of cracked black pepper and sea salt with balsamic vinegar on fresh which baguette.

Falafel and Halloumi with pickled red cabbage and mint yoghurt, preferably in some sort of flatbread

Frazzle, lettuce and tomato is my veggie special sandwich.

Egg mayo. Lush.

Cherry tomato, fresh mozerella, basil leaves and drizzle of balsamic vinegar.

Houmous, avocado and tomato is a terrific veggie/vegan sandwich, especially on slightly crusty bread.

Halloumi with olive tapenade

Mozzarella, sun-dried tomatoes and pesto on crusty toasted bread. Mmmm.

Brie and grape is fabulous.

Fried egg sandwich
Humous and roasted veg

Loving the sound of the M&S sandwich and brie & grape!

I love peeling slices of carrot and layering them up with hummus. Almost like smoked salmon! So yummy.

It's as much about the bread as the filling.

But something Mediterranean is usually good. Halloumi/feta. Roasted peppers/olives - that sort of thing.

Or a decent wholemeal bread with mature cheddar and really good chutney..

Best one I've ever made was a suggestion I found online.

Firstly caramelise some red onion in a little oil and rose harissa paste to make a relish. Leave to cool slightly.

Spread ciabatta with humous

Top humous with slices of grilled aubergine

Top aubergine with grilled halloumi slices

Top with the relish

It was amazing!

Pumpernickel bread. Hummus. Chargrilled veg.

Crusty baguette. Creamy egg mayo. Watercress.

Whole meal bread. Caramelised onion chutney. Sharp cheddar. All toasted.

White soft bread. Crunchy peanut butter. Honey.

I'm all about a falafel/hummus/grated carrot combo.

I also love cheese and beetroot and a slathering of peanut butter, oh! I also love peanut butter/honey/banana combo.
