Best vegetarian sandwiches...

Just read the 'greatest sandwich in the world' thread, and am now craving a vegetarian equivalent. I have a few strong contenders, which I'll put in the comments.

Egg mayo with tomato

A friend recently made me a cheese and sandwich spread sandwich - it was amazing !(for anyone not familiar with sandwich spread it is kind of mayo with chopped up relish type bits in it.)

If I make something like a nut/chestnut/lentil roast. A thin slice of it the next day in nice seedy bread with mayo or cranberry sauce or some chutney is the best ever.

Smoked cheese, ripe tomato and sliced avocado on crusty bread - yum!

Or if it were ever to return, the original M&S cheese and celery sandwich.

I'm not a big fan of sandwiches but I once had a sublime onion bhaji, mango chutney and salad one, on seedy brown bread.

At home I tend to go for either egg and watercress (salad cream or natural yoghurt, not mayo) or a good old cheese salad one (no tomatoes because tomatoes have no place in sandwiches, but some beetroot always a good idea).

Snazzy fillings like hoummus, feta etc need pitta bread or flat bread, rather than sliced bread.

Baguette, proper salted butter, slices of perfectly ripe Brie, rocket and my homemade blackberry jelly. Just enough filling so it drips down your chin, and stains your fingers purple...

Speaking of Marmite, my mum does a weird one that she loves -- Marmite with either tahini or peanut butter!

I had the world's most amazing vegetarian sandwich at a restaurant called The Foundation in Vancouver, Canada. Sadly it's now closed. The sandwich was called the 'Nooch Wich'. From memory, it was really good sourdough bread spread with something spicy and tangy, sweet corn, black beans, melted sheep's cheese -- and baked/fried with slices of tomato.

Oh my god it was good. Nearly cried when I was told the Foundation had closed!

And another good memory from the now-closed Foundation restaurant: the ‘Hombre’.

Toasted rye bread with mashed avocado (with a squeeze of lemon and a pinch of salt), some black beans, alfalfa sprouts, and lashings of chipotle sour cream (just sour cream mixed with chipotle).

Grated cheese and grated carrot (equal quantities) mashed up with some milk into a thick paste. Spread onto seeded bread.
