And it's doing my ruddy head in.
All the recipes in my books and that I've been able to find online have been of the filled with lemon curd variety. I don't want this type, the one I want is described in the deli I went to (in Provence) as a sablés au citron but it's not a biscuit so god knows what they were smoking when they named it. It's a thin flat flaky pastry topped with another thin layer of a sort of caramelised lemon jam I think, very sharp, very intense. Think grown-up jam tart. It's incredibly delicious, they were flying off the shelves so I think it must have been this shop's speciality.
I'm tempted to have a go just by making a fine cut lemon marmalade and spreading it on a thin layer of puff pastry but I worry that it may end up being the weirdest thing ever.
Have any of you heard of this? Is there such a thing as a recipe or even a suggestion of how to make it anywhere? Am I doomed to have to go back to the same holiday destination just to get my fix?
