I want to make a *very* specific type of lemon tart

And it's doing my ruddy head in.

All the recipes in my books and that I've been able to find online have been of the filled with lemon curd variety. I don't want this type, the one I want is described in the deli I went to (in Provence) as a sablés au citron but it's not a biscuit so god knows what they were smoking when they named it. It's a thin flat flaky pastry topped with another thin layer of a sort of caramelised lemon jam I think, very sharp, very intense. Think grown-up jam tart. It's incredibly delicious, they were flying off the shelves so I think it must have been this shop's speciality.

I'm tempted to have a go just by making a fine cut lemon marmalade and spreading it on a thin layer of puff pastry but I worry that it may end up being the weirdest thing ever.

Have any of you heard of this? Is there such a thing as a recipe or even a suggestion of how to make it anywhere? Am I doomed to have to go back to the same holiday destination just to get my fix? Grin

Yes, that's the usual lemon curd tart we mostly have here. Delicious, but not the tart I'm looking for! Thanks for looking.

Thanks Imperial, no.3 is the closest I've seen so far but I think the filling is still a little too curd-like.

Have you ever had a pissaladière? It looks a lot like that, a large rectangular very flat tart. Except with a sort of lemon marmalade on top, not cheese and anchovies!

I'm not helping much, am I?

Hmm. I have made one that sounds a bit like that - all my classic recipes are a much milder lemon with cream, this one is tangier, thinner, no cream. And harder to get right!

In other news, I've just discovered that the lovely deli has a Facebook page. Ye gods, I am drooling. Can't understand a damn thing, but who cares, with those photos! These are the tarts. Not a great closeup photo but you get the idea of how thin they are.

Anne - that's why I went looking for a recipe today! I bought those, thinking they would be similar and they're not, far too sweet and the pastry is shortcrust, I could have cried.

Am really over-invested in these damn tarts...

That's ok! I think I'd have really liked those little tarts if I hadn't had the expectation hanging over me. Everyone else in my family really likes them!

I would love to discover the recipe but I suspect it's a closely guarded secret. The only thing for me to do is go back there on holiday and conduct research. Lots of research...
