I want to make a *very* specific type of lemon tart

And it's doing my ruddy head in.

All the recipes in my books and that I've been able to find online have been of the filled with lemon curd variety. I don't want this type, the one I want is described in the deli I went to (in Provence) as a sablés au citron but it's not a biscuit so god knows what they were smoking when they named it. It's a thin flat flaky pastry topped with another thin layer of a sort of caramelised lemon jam I think, very sharp, very intense. Think grown-up jam tart. It's incredibly delicious, they were flying off the shelves so I think it must have been this shop's speciality.

I'm tempted to have a go just by making a fine cut lemon marmalade and spreading it on a thin layer of puff pastry but I worry that it may end up being the weirdest thing ever.

Have any of you heard of this? Is there such a thing as a recipe or even a suggestion of how to make it anywhere? Am I doomed to have to go back to the same holiday destination just to get my fix? Grin

There is a French site that looks like it is dedicated to various types of lemon tart - and it has a recipe for what look a bit like small versions of yours - except with chocolate on top. www.tarteaucitron.com/sables-citron-chocolat-epice.php
Failing that, extensive research sounds rather wonderful.

At least tell us where the shop is! I'm in Provence and need to try one of them now.

Me to - they look lovely.

Liara, it's in Le Lavandou, in the Var département of Provence. Where are you?

Dunno why I was so specific, you probably know where it is Blush

I'm about two hours away.

WIBU to do a four hour round trip for a cake? Hmm

I'm a tad closer than Liara-going that way on Sunday...should I detour and investigate?? I doubt it is open on a Sunday afternoon?

Well, if you're going Grin the shop is Triateur Dequidt. Can't remember the address but will probably pop up on google. Enjoy!

filling is just lemons and sugar, no butter.
