Storecupboard clearout/useup thread

Inspired by the 'freezer roulette' thread a while ago (which I did and now have a lovely organised freezer with properly labelled food! 😄) I'm now aiming at my store cupboards. Just opening the doors without moving anything, I can see tinned fish, random boxes of specialty dried pasta I've used once, coconut flour (why?!?) and a variety of other stuff that really shouldn't be there. I can't bear wasting food though, so I'm determined to find tasty ways to use up as much of it as possible. I'm spending time this afternoon making a list of what I've got, then I'm going to try and use up at least two things off of the list per week. Anyone else up for a cupboard clearout?

Okay, I'm a flexible cook , I use what I've got and I don't weigh ! This is an easy one large heavy saucepan recipe!

So you dry fry the ground spices you like, I used ginger, cardamom, also some walnuts or pecans. You have to stay by the cooker all the time btw don't burn them. Then you melt approx. 1\2 cup of almond butter ( or peanut butter) in the pan with 1\2 cup of molasses, and 1\2 rice syrup or whatever syrup you like. Add 3\4 cup of almond milk (or whatever you like or have!) Mix very gently , don't let it simmer, on the lowest gas you've got , I use a diffuser. Let it cool down.

Sift in 1\2 cup of rice flour 1\2 cup rye flour or gf flour. Then I tsp of baking powder and one of bicarb. Stir in gently and add more milk if needed. Put in a non stick tart tin and bake at 180 for 1\4 of an hour then turn down a bit , I cover it with a baking sheet then. Look at it after 1\2 hour if you like a soft chewy texture keep the centre soft.

Let it cool in the tin then turn out on a trivet.

Someone up thread mentioned they had spelt flour to use up - I didn't have enough plain flour for pancakes tonight so used 30% plain, 70% spelt. Worked perfectly. Yum yum I live pancakes! I usually use it with wholemeal flour 50/50 in bread, v nice.

I used up a jar of green tapenade tonight - smothered it on some haddock fillets, wrapped in foil and baked for 20 mins at 180c. Yum. Dd2 scoffed mine...

Did I kill the thread? I've got quite a lot of quinoa I bought a while ago but I can't quite remember what I was intending to do with it... Any good ideas?

I found some risotto rice af the weekend do I tried a new recipe - baked chorizo, chicken and prawn paella. Was lush 😀
