Ideas for hot weather?

Hello,

It's absolutely roasting this evening and what I had planned to cook is really not tempting me at all - have now chucked that in the freezer, so does anyone have genius ideas for hot summer evening food?

Rotisserie chicken with potato/pasta/couscous salad, normal salad, baguette, cheese, big bowl of cherries

We're having some leftover chilli con carne I had in the freezer, with nachos. I was going to do macaroni cheese, which is distinctly unappealing today.

Tomorrow I might do a pastry tart of some description.

We just ate! Early because I am going out. Roast beef which I roasted at lunchtime with a salad of new potatoes, mange tout, feta, beetroot and baby tomatoes with a dressing made up of wholegrain mustard, honey, lemon juice and oil.

It was nice - just the salad would have done me to be honest but as I had already bought a joint of beef I cooked it.

I love some ham, new potatoes and salad when it's hotGrin. Jacket potatoes are also good as it's so easy to do.

Following as attempting to meal plan for the hottest week ever! So far got chicken salad (fancy with goats cheese, roasted cashews etc) , stir fry , poss steak/ lamb with roasted veg, maybe some bbq stuff, kebabs?

We had a BBQ yesterday and have lots of leftover uncooked meat.

So we'll be having homemade burgers with salad.

I was planning a chilli con carne but seems a bit much in the heat. We are now going to BBQ some monkfish accompanied with cauliflower rice and a feta salad

I'm dealing with lack of appetite from being 8 weeks pregnant and with this heat, I'm at a loss. OH is also away and he's been cooking for me lately as I can't cope with the smells. Tbh, I'm extremely tempted to get a Mcdonalds - I've been craving one since 8.30am and I haven't had fast food in about 6 years!

Load pads of brilliant ideas - CatherineDeB that salad sounds awesome, Rotisserie chicken is also a great idea as keen to avoid having the oven on for long. Rose is good, have some white already chilling though so will probably go with that, or maybe just some elderflower. Love this time of year but do difficult to plan for properly!

I go for stuff with salad.
Falafels, pittas, salad
Quiche and salad
Skewers (chicken/fish/halloumi/veg)
Quesadilla's
Cold meats
Fritata
Make up a couscous, pasta, potato salad and dish up with any of the above.

All I really fancy is a bowl of Greek salad tbh.

Haloumi and mushroom burgers with corn on the cob.
Falafal and flat bread and salad.
Bhajis, minty yoghurt and salad, rolled up in a chapatti.

We're having omelette and chips, but I really don't fancy it.

Garlic and lemon marinated chicken, cooked on griddle pan with salad and pitta and hummus. Even 3yo fussy DD lived the chicken

Chorizo, feta and mixed grains. This is a staple. One of the packages of merchant gormet mixed grains with finely chopped tomato cucumber pepper then fried chorizo and chopped feta. A bit of mint and parsley through it is extra nice

cild meat and mezze bites from the supermarket

I'm definitely stealing the idea CatherineDeB - my other half bizarrely hates mustard and beetroot but otherwise would be eating it tonight! sadly it will have to wait until the weekend when he's away!

If you like sweet potato these sweet potato falafels are the business! (I don't use any of the ready made spice mixes just chuck in whatever I have to hand.
