Ideas for hot weather?

Hello,

It's absolutely roasting this evening and what I had planned to cook is really not tempting me at all - have now chucked that in the freezer, so does anyone have genius ideas for hot summer evening food?

Those sweet potato falafels look amazing!

I've just invented a vaguely gazpacho/ajo blanco soup - bread, cucumber, water, green grapes, olive oil, garlic & cider vinegar, all in food processor. Kids have tasted it and said it's nice but they have form for then not actually eating new things at the mealtime, so they may be having cheese sarnies while I eat the soup. Glass of rosé also in my future.

Yesterday we had warm Caprese pasta salad, and today Chicken shawarma with salad and pitta bread. All I really want in this weather is salad really.
