Oh, very clever! I never really know what to do with the lefter over liquids from a slowcooker brisket, onion soup is a great idea. Did you "just" serve the the liquids and onions without adding adding anything?

Yes, pretty much just the onions and liquid, checked for seasoning, then baguette and gruyere melted on top
