Ham, potato dauphinoise and.....

On Boxing Day were are having Christmas baked ham (which will have been made on Christmas Eve) bread sauce flavoured potato dauphinoise and... what vegetable? I was thinking of roast sprouts from Nigellissima, but unsure whether that would go or not? Any ideas? Thanks!

Definitely something fresh and green. Ham is very salty, dauphinoise quite heavy and rich. Maybe even green salad? Steamed broccoli?

Would say creamed leeks but not with dauphinoise. Second the red cabbage suggestion - sharpness will cut through the rich cream etc.

I'd go for something to cut the richness, so maybe Savoy cabbage, broccoli or French green beans.

I'm of the opinion that sprouts go with nothing as they're foul little balls of bitterness.

Something very plain and simple, like peas or broccoli. No other butter or cream, it would be too rich. I'd prefer plain potatoes if I'm honest.

I would choose French green beans. Plain as everything else is very well flavoured.

I do like braised red cabbage too, but not sure if I would serve it up with thiscombo

Leeks with wholegrain mustard done in the microwave, and celery and carrots baked together in a foil package at the same time as the potatoes dauphinoise.
