If you had roasted a chicken on Sunday, would you use leftovers on Wednesday in a risotto?

Fresh chicken, bought and cooked on Sunday.

Bear in mind that this is a £9 organic chicken we are talking about here

Alas I binned the bones on Sunday. DH can't stand them in the fridge whilst I procrastinate about using them.

then would eat leftover risotto for lunch on Thursday too
and make stock from bones

Finished my leftover chicken tonight coincidentally and making stock tomorrow (I love my slow cooker )

I don't really have a recipe. Just chuck in whatever veg there is to hand and the chicken towards the end.

i gently fried an onion & a red pepper in butter for about 10 mins. added arborio rice, roast chicken, & then stirred stock in for about 20 mins. oh, & a rind of parmesan if you have any. bit more butter at the end. serve with parmesan.

no my dd and i would have eaten all the cold chicken straight from the fridge on monday - but i think that wednesday would be fine if you were cooking it
