Bear in mind that this is a £9 organic chicken we are talking about here

Gillian76, I could have written your original post. My £9 organic chicken, roasted Sunday night and refrigerated after cooled down, is still in the fridge today and I wanted to do a risotto with the leftovers tonight, but wasn't sure if I should or not. Opinion on the thread generally seems to think it should be OK.

Yes, it was lovely. I gently fried an onion and three cloves of garlic in butter, then added the rice, stock, bayleaves, oregano, half a tin of chopped tomatoes, seasoning etc and cooked that for about 20 mins. Then I put in the cut up chicken and heated it through for about 10 mins. Served with parmesan, steamed green beans and a salad. Delish. Would never eat rissotto the next day though, cooked rice is one of the worst culprits for food poisoning, though you'd never believe it, would you?
