Family vegetarian meals that don't contain aubergine, sweet potato, squash, spice, avocado, yoghurt, cream, cheese, fruit

I'm trying to get us eating a huge amount less meat and fish (save money, ethical issues etc) but DH is so fussy.

I know I shouldn't pander to it but id like to convince him he can enjoy vegetarian food first and then tackle everything else.

DCs don't love spicy food or pulses but am doing some meals with pulses and they are dealing with it. But I'd like to find some that don't rely on pulses or a tomato sauce. Been making so many tomato based things!

Also no pasta as have recipes coming out of my ears for that.

Have been doing a lot of mushroom stuff that has been going down well.

Any ideas? Don't ask for much do I!? Grin

I'm a vegetarian and don't like meat. So not eating meat isn't a big deal for me. Dh is happy to eat veggie but he likes meat and a Quorn filet makes his heart sink! I would never expect him to go a week without meat. And as someone who likes meat the veggie 'meat' substitutes just don't do it. He doesn't mind Quorn mince in a sauce but would rather have tofu etc

We tend to have meat two nights a week. Bolognese (bulked out so I can make two meals out of one pack mince and obv I don't eat it!) or such like once and then a roast - leftover cold meat goes in sandwiches. Then we have fish a couple of nights (again not me!) and then veggie meals the rest. Dh is free to eat neat at lunch times as are the kids At school.

We do quorn potato a mushroom pie ( lightly fry off quorn stick in pie dish with mushroom and cubed potato cover with stock cook then stick pastry on top serve with veg and gravy.

Really easy meal for fussy non spice liking dc!

DP is of Nigerian origin. To be vegetarian is insane to his family. But he has taken it on the chin and had meat for lunch every day and lots of eggs and fish 3 days last week with the rest vegetarian.

I don't think its fair for you to feel like he is miserable not eating meat. Maybe he needs to make sure he meets his carnivorous side in his lunches instead. Would he be happier with no meat but a bit more fish as a compromise?

Check out Jamie's Spanish Prawns with Fennel. I followed similar recipe from a Sunday magazine. I served mine with brown rice. Was so nice!

I also do a Veg Tikka, I make it spicy and add in a huge dollop of natural yogurt.

And I do a chicken and veg tikka, which has 2-4 chicken breasts, 2 peppers, 2 or 3 carrots, courgette and loads of onion. With all the veg diced. Very popular with DD1. (This freezes really well, so we eat half and freeze half).

Yum to tikka.

Also vegetable stir fry

Salads with wonderful dressings. I had one today with a tahini and like dressing. 'Twas ace and didn't miss the meat (Mych)
