I'm trying to get us eating a huge amount less meat and fish (save money, ethical issues etc) but DH is so fussy.

I know I shouldn't pander to it but id like to convince him he can enjoy vegetarian food first and then tackle everything else.

DCs don't love spicy food or pulses but am doing some meals with pulses and they are dealing with it. But I'd like to find some that don't rely on pulses or a tomato sauce. Been making so many tomato based things!

Also no pasta as have recipes coming out of my ears for that.

Have been doing a lot of mushroom stuff that has been going down well.

Any ideas? Don't ask for much do I!? Grin

Lovely meal plan.

Substitute meat is great as a one off, I use it for the kids as I would if I was buying anything processed. I see it as no more peculiar than most other processed food.

I make a fake chicken pie about once a month and a soya mince lasagne or moussaka about once a month also.

Everything else is pulses and nuts.

There's a great homemade haggis recipe a blog called maple spice. Looks really easy to make. It's got lovely simple ingredients.

I've made a lovely fennel and leek soup for lunch which everyone loved.

I can add mine. This is chosen by the kids, so is a bit different.

Mon- pea soup and bread

Tues - Cornish pasties with mash and veg

Weds - beans on toast

Thurs - paella

Fri - peanut curry

Sat - home made pizza and chips

Sun - homemade haggis roast

Mon - cauliflower subzi

Tues - dal makhani and rice

Weds - spiced brussel sprouts and rice

Then I go shopping. Lunch is veggie sausage rolls, mini pizzas, baked bean and cheese pastries, rice cakes with dip and chopped veg. This weeks costs were about £60. So it is a good way to save money.

Sorry OP, I cZn'tbsay if my lentil bolognaisse is the same as standard bol but with lentils. I've been veggie since I was 18. I make meat bol the same way I make lentil - can't say how genuine it is!

my (non-veggie) dc love this - more than meat bolognese!

I try and give my kids meat 2 nights, fish 2 nights and veggie 3 nights. I only give them 'pure' meat so no bacon, chorizo, salami

Other veggie meals - pasta with pesto and cherry tomatoes (or with feta instead of pesto), cous cous salad, omelette, occasionally quorn mince as a substitute, raclette occasionally.

Regarding tofu - which do you use? I always use firm smoked tofu which is amazing. infinitely more flavour than silken tofu. Either of these is excellent:

You can buy online or from whole foods or waitrose and there are other flavours too. Great calcium source. Delicious in stir fries or I even have uncooked slices on a salad. Or you can put in a curry.

If mozzerella is a goer then mozzarella burgers: grate one courgette, break apart two balls mozzarella, add a spoon or two of ground almonds, a beaten egg and a spoon of turmeric, chilli powder and season. Combine and fry in a teeny bit of coconut oil. I eat low carb so have in large lettuce leaves with a bit of this chipotle mayo and sliced tomatoes and red onion and its amazing.

I don't add potato or pasta into mine. But put lots in for the kids In a different pan. It's so delicious.

Also tomato based but make huevos rancheros a lot too...sometimes with sliced up quorn chorizo style sausages.

And roasted broccoli and cauliflower with salt pepper and paprika is so good I could eat just a bowl of that.

I do veggie fry ups for tea sometimes, a slice of veggie haggis fried, fried potato scone, eggs, beans, mushrooms and veggie sausage (can you tell I'm Scottish?)

Toad in the hole is nice made with big slices of mushroom or veggie sausages, especially with onion gravy.

You could try some meat with a lower carbon footprint, I substitute free range turkey mince for beef in things like chilli and bolognaise, its cheaper and healthier and about a third of the footprint of beef or lamb.

I also add pancetta to otherwise veggie pasta sauces and chillis sometimes.

It's a supermarket staple up here, oatmeal, onions, lentils, mushrooms etc. bit like a moist nut loaf.

MacSweens is the haggis we buy I think the recipes are pretty simillar, although I think the bought one has kidney beans in.

Have been getting better at making nice pastry. Any nice vegetarian pastry ideas? I'll be making quiche for me and the DC but want something DH will like as well. Have been doing a chicken, mushroom, leek and bacon pie with very little chicken and bacon but I'm not sure it could exist completely without.

Veggie sausages are good in stews/casseroles. I make a sausage and cider casserole (like a chicken/pork Normandy) and a chasseur style one. Button mushrooms are nice instead of chicken in coq au vin.

My friend made me a pie that was like chicken and leek, in a white wine sauce and using quorn pieces instead of chicken. It was lovely.

And mushroom and Stilton pie is a thing of wonder. Search under my name for my recipe.

Soya protein usually is in veggie sausages.

These are my kids favourite sausages

Sainsbury's do veggie sausages called something like Bubble and Squeak sausages. They are gorgeous.

falafel? you can make them as hot or mild as you like.
indian curries don't need to be spicy and are oftdn veg based.

I used to make the dds little lentil pies in a jam tart tin (but with pastry top and bottom, like mince pies). Grated carrot, onion, tiny cubes of potatoes, some spic and a drained tin of green lentils. They used to go down v well.
