What are your (veggie) dinners like this week?

DH is a vegetarian so we eat a largely veggie diet, and I'm getting a bit bored of the same old stuff.

We often have:
Vegetarian cottage pie (with lentils)
Chilli
Stuffed pasta for a quick and easy dinner
Jacket potatoes
Pasta bake
Some kind of quiche or pie with salad and wedges
Risotto
Halloumi and veg bake
Butternut squash and spinach lasagne, but it's a faff so quite rare
Sausage and bean casserole (with quorn sausages for DH and real sausages for the rest of us)
Sausage and mash
Vegetable curry
Veggie bolognese

It's all fine but it seems to be on a bit of a two week rotation and I'm getting bored. What do your meal plans look like? I don't like quorn but am happy to make two versions of something, one with quorn one with meat, if it's very minimal extra effort but would rather stick with one vegetarian meal mainly.

What do you put in your lentil bake? My veggie cottage pie is lentils and veg in some stock with herbs etc and baked with either normal mash or sweet potato mash and some cheese on top, is it quite similar?

I have only just discovered the veggie lentil cottage pie. Love it.

One I do often is boil potatoes, Brussels and peas. Drain over some spinach so it wilts. Fry off some leeks and onions, mix all up together with a bit of cheese then form into patties and fry.
Have with fried egg or baked beans.

I'm feeling in a similar sort of rut tbh.

Over the course of two weeks we'd probably have along the lines of:

chilli
lasagne
a roast dinner-esque meal
an Indian style curry
a Thai style curry
pasta - but so, so bored of it and finding a sauce we'll all eat is virtually impossible
sausage casserole
a soup based meal
egg and chips
jacket potatoes, salad and quiche
sausage and mash
burritos or tacos or wraps
some sort of pie

Eggs seem missing, how about omelettes, frittatas or soufflés?

Savoury pancakes

My kids like mini Yorkshire puddings with baked beans inside and grated cheese

Veggie burgers are also popular, can buy or make at home, based on pulses or cheese or veggies and breadcrumbs

Pesto Tart (puff pastry, pesto, cherry tomatoes) with potatoes and salad.
Chickenless pie ( chicken pie made with quorn)
Gnochhi with garlic butter and roast tomatoes or baked with spinach and pesto.
Risotto
Baked camembert, crusty bread, apple and grapes.
Baked feta, roast tomatoes, italian bread.
But the most requested in our house is

Batteted halloumi, chips and mushy peas!

My lentil bake is layers of sliced potato, sliced onion and onion in a casserole dish, covered in stock and baked. I sometimes add cheese or tomato if I'm feeling flush, or bacon for carnivores.

Pizza - home made, shop bought. Take away
Tortilla

Google ottolenghi tofu pepper. It's amazing and v quick. I don't put that much black pepper in though and only half the amount of chilli. Also, veg pad Thai. Cut up tofu, drain, marinade in tesco Thai green curry paste (the only one I've found which is vege) chop up chilli, garlic, red onion, fry with tofu and stir in rice noodles and crushed peanuts and spring onions after cooking the tofu. V quick and easy.

Squash, feta & chilli wraps (my favourite midweek dinner)
Roast vegetables with couscous (there's a good ottolenghi recipe online somewhere)
Bean & squash stew, mexican style
Marinated & fried tofu with green beans & rice
Pasta with courgettes
Biryani with whatever veg are left

tofu stir fry (I use cauldron marinated tofu pieces) with whatever veg you fancy and udon noodles.
Linda Mccartney sausage and sweet potato mash
Spaghetti with vegetarian pesto
Halloumi wraps with homemade salsa and chive philadelphia
Baked potato, houmous, colslaw and salad
Cauliflower, broccoli and macaroni cheese
Spinach and chickpea curry
3 bean chilli and mexican rice
leek and potato 'pie' with quorn sausages or dippers

I am the only vegie in the house so tend to eat pretty simply.

Mmm lots of nice ideas, this is making me hungry. This week we are having lots of things that were batched cooked and put in the freezer:
Sweet potato and peanut stew with rice (also called African stew)
Pancakes!
Pasta and pesto with roasted veggies
Banana and tea curry (recipe from girl called jack, who has done lots of vegan recipes recently)
Probably sausage and mash or tortillas

Just had aubergine parmigiana and garlic bread. Aubergines, onion, garlic, tinned tomatoes and cheese...dead easy and tastes luxurious.

pizza is very much absent from your list.
ring the changes with what you put in the pies and curries and lasange - there are an almost infinite number of combinations, use different cheeses on top of lasagne too.
do more nut things? walnuts and stilton make a marvellous flavour combination.
Pancakes - lots of options there.
Mushroom stroganoff.

Last night we had mushroom and ale pie, tonight is bangers and mash. This week we're also having chickpea curry, tofu stir fry, spicy vegetable and bean soup, savoury pancakes filled with spinach and tofu 'ricotta', pasta with spring greens, chickpeas and chilli. We are also in a bit of a rut though.
