What are your (veggie) dinners like this week?

DH is a vegetarian so we eat a largely veggie diet, and I'm getting a bit bored of the same old stuff.

We often have:
Vegetarian cottage pie (with lentils)
Chilli
Stuffed pasta for a quick and easy dinner
Jacket potatoes
Pasta bake
Some kind of quiche or pie with salad and wedges
Risotto
Halloumi and veg bake
Butternut squash and spinach lasagne, but it's a faff so quite rare
Sausage and bean casserole (with quorn sausages for DH and real sausages for the rest of us)
Sausage and mash
Vegetable curry
Veggie bolognese

It's all fine but it seems to be on a bit of a two week rotation and I'm getting bored. What do your meal plans look like? I don't like quorn but am happy to make two versions of something, one with quorn one with meat, if it's very minimal extra effort but would rather stick with one vegetarian meal mainly.

My emergency vegetarian meal is 3 bean soup from sainsbury's with some couscous.
For pasta sauce - any Sacla tomato or chilii pesto and I add some ricotta cheese to it.

I do a variation of veg curries - cauliflower and potato curry, okra curry, bombay potatoes, dahl, chana (chickpeas) etc. So easy and can serve with white or brown rice, salad, naan/roti/chapati depending on mood.

Also love Thai curries. I make really nice mixed veg Thai green and red curries, and a coconut/pumpkin/green bean one that goes down well.

Other veggie stiff we like:

Stuffed peppers
Veggie Tex Mex - Loaded potato skins, refried beans, Spanish rice, grilled veg fajitas etc
Chickpea tagine with cous cous (easy peasy)
Veggie paella (just substitute meat/shellfish with lots of extra veg)
Spanish omelette or frittata
Root veg stew and dumplings

Messy pie - any veg fried (peppers, courgette, aubergine, squash, mushrooms) mixed with egg, cheese (preferably feta) and made into a wellington with puff pastry. Serve with roast potatoes and a green veg.

Recipe for Spanish rice, please. :)

Easy pie - puff pastry / mashed up feta, red onion, either a load of shredded spinach or a load of lightly cooked savoy / halved cherry toms if you don't mind mushy tomatoes (I do).

Puy lentils cooked in red wine and some herbs or spices , then stir roasted vege into them. Lovely with dauphinoisse potatoes.

Cauliflower cheese and chips

Curry with pretend chicken/just veg/paneer

Homemade pizza (HFW base) with mushroom and ricotta and rocket. Or just the classic tomato and mozzarella Smile

Crispy baked tofu with tomato sauce and potato rosti.

Tuesday: spinach balls with spaghetti
Wednesday: tomato soup and grilled cheese sandwiches
Thursday: h/m veggie burger with veg and oven chips
Friday: eggs baked in roast veg
Saturday: bean chilli

I tried a Lentil Bake for first time yesterday, similar to what BikeRunSki described (because it sounded yummy when I read it on this thread.) I added a layer of chopped carrot and broccolli.
It was delicious. DH loved it.

It will become a staple in our house!

Following with interest, as DD1 has gone veggie for lent. Our meal plan for week 1 includes jacket spuds with cheese and beans, peppers stuffed with tomatoey rice and topped with melted goats cheese, pizza, veg lasagne, veg soup, veg chow mein (with prawns for the non veggies). We're doing the day off on Sundays thing, so having Thai chicken curry. Week 2 will include veg chilli, veg curry, quiche, cauliflower cheese and more pizza.

Going to watch this with interest as we are stuck in a similar rut. In our house though I'm the veggie and dh and the kids eat meat although often we all end up as you do eating all veggie to be honest

Store cupboard and freezer usage this week so veg chilli, mushroom and lentil burgers, veg ramen and risotto I think

We are not veggies but often eat non -meat meals.

This week we are having:

Sticky onion tart with cubed herbed roast potatoes and green veg x 2 nights
Fennel risotto with salad
fried egg, chips and beans

We often have mushroom risotto, or omelettes or roast veg & creme fraiche with pasta or soup and homemade bread

Not veggie here either, have had a quick read of previous posters, but cannot see couscous?
I do couscous cooked with stock, and mix in fried onions/shallots / chopped hard boiied egg/ halved cherry tomatoes/ peas and sweetcorn and season - this is good with rice instead as well

pasta bake is great but we do ours with ratatouille base (obviously can just do ratatouille) and add baby potatoes as well.

Have you checked out middle eastern recipes? They eat lots of scrummy vegetarian food. Dd and I are making pittas for falafel tonight with a yoghurt dip. We love butternut squash pilaf too.
