Microwave in it's skin then split and fill with grated mature cheddar cheese.

oooh...peel , cut into chunks and par boil..then pop into an oven proof dish, sprinkle with olive oil, honey , brown sugar and a bit of rock salt.....then bake till sticky & caramelised!

I just had spicy carrot, sweet potato and lentil soup - yummy!
with homemade bread because I dusted down the breadmaker this week and thought i ought to use it more often.

well to quote FIL - it's quite sweet this potato init - my reply erm that's cos it's SP! lol.

I roast mine in wedges hmmm yummy!

You can simply cut them into wedges, toss in a little olive oil and rock salt and bak eion the oven for 20 minutes or so.

They taste strangely sweet, but v v yum, and much better for you than normal spuds.

make latkes, or I slice them parboil then roast them off in oil, salt and tabasco. Spicy and sweet - yummy!

like a grated potato cake...

i make them by grating several big potatos...then squeezing out most of the water....binding with an egg and some flour...then shallow frying until golden..can put grated onion in too...!

My dd LOVES it baked in the oven-till its sticky (or microwaved if you're in a rush) then mixed with cod that I've cooked in milk. When its been cooked long enough it scoops out really easily.
She has this a few times a week. Its really simple.

thai style sweet potato curry - very yum. pre-cook chunks of sweet potato (about 500g) till half firm half squidgy (about 8 mins) meanwhile gently fry a red onion, 3 cloves garlic and 1 chopped deseeded red chilli, then add 400ml can coconut milk. simmer till a bit thicker then add sweet potato and simmer for about 5-10 mins. you can add ginger/lemon grass/lime etc. to onion mix if you prefer stronger thai taste.

Spicy sweet potato soup

1 large sweet potato diced, 1 med potato diced, 1 med onion sliced and a good dollop of curry paste.

Fry the onions until soft then add the potatoes for a couple of mins then curry paste for another min. Cover with veg stock and simmer for 20 mins then blitz

If it's thicker than you'd like just add a bit more stock.

Agree with other that sw pot is great comfort food.
