Quick copy from my recipe files while I watch Family Man

Sweet potato and raisin bread:
2.5 cups flour
2 teaspoons baking powder
.5 teaspoon salt
1 teaspoon ground cinnamon
.5 teaspoon grated nutmeg
2 cups mashed cooked sweet potatoes
.5 cup light brown sugar, firmly packed
.5 cup butter, melted & cooled
3 eggs, beaten
.5 cup raisins

preheat oven to 180 degr Celsius, grease 9 by 5 inch loaf pan.
sift flour, baking powder, salt, cinnamon, nutmeg in bowl and set aside.
use an electric mixer to beat sweet potatoes with sugar, butter and eggs till wellmixed
add flour mixture and the raisins.
stir with wooden spoon until flour is just mixed in.
Put batter in the loaf pan.
Bake for about 1 to 1.25 hours.

Gorgeous with butter or Philadelphia cheese?mmm think I need to make one myself tomorrow

Forgot to add that I always cook the sweet potatoes in the microwave as you would with normal baking potatoes (only sweet potatoes cook faster)

As a new microwave owner- never had one before- how long to bake sweet potatoes in m-wave then?

UniSarah, If you put in 3 - 4 potatoes at a time, it can take anywhere from 8 to 12 minutes (900 Watt m/w) depending on size. Just poke some holes in the potatoes with a fork, warp in kitchen towel and check after 5 - 6 mins. They are ready when you can stick a knife through them easily
