whenever I've made them they are quite grey and solid. What am I doing wrong?

I do mine on the hob - fry them in a little olive oil then when browned add the tomatoe sauce.
Trick is to have wet hands when shaping the balls

And I always put finely chopped onion in my meatball mix
AND I add cumin and coriander

The way we do meatballs:

400g minced beef
1 egg
1/2 c / 50g ? breadcrumbs
Worchester sauce (whatever looks good)

Smash together with hands, fry in olive oil turning frequently until browned all over, lower heat and cook about 5 - 10 more.

Mom added finely chopped onions, tomato paste & herbs (usually organeno or basil). But my DC don't like them this way

No no, there are Waitroses to be had oop north and their meatballs are bloody brilliant. (My nearest Waitrose is Otley, am seriously considering moving there!)

bloody Delia does it with pork - think I'll do mine with beef so that if I undercook them a bit(!) it won't matter.

I've got a good recipe in a sainsbury's magazone for spanish meatballs.. not sure where it is though.

What I can remember: You use mince and good quality skinned pork sausages mixed together (this keeps them together) finely chopped spring onions, half chilli, paprika. Brown them in olive oil, transfer to oven dish. Add paprika and passata to the pan, cook - pour over meatballs - transfer to oven. Sorry that's a bit vague

We do Nigellas, which are lovely - only one visiting child has ever mot liked them.
250g minced pork, 250g minced beef, i eggm2tbs grated parmesan, 1 crushed garlic clove,1tsp oregano,3tbsbreadcrumbs,salt and pepper.
Squidge all together. Make into balls and chill.

Make a tomato sauce - blitz an onion 2 cloves of garlic and a tsp of oregano. `Fry the pulp in a mixture of butter and oil until soft and browning. dd a bottle of passata and about as much again of water. Add a pinch of sugar and simmer for 10 minutes. Add 100ml milk, then gently put in the meatballs. Simmer for 20 minutes, check the seasoning and cookedness and serve with pasta. Yum. Think we'll have it tonight!

100g breadcrumbs

cumin seeds and chilli peppers grounded with mortar and pestle
one clove of garlic crushed
1-2 eggs depending on what weather is like

mix together
refridgerate
then cook

never add onins to mince as it turns black

I haven't got a clue where my nearest waitrose is, I'm v rural and 25 miles from nearest superdoop - choice of Asda, booths or morrisons (ooh! the choice!)

I forgot to buy breadcrumbs and I am NOT doing a 50 mile round trip for them - can I just smash toast up?
