I did indeed make scones yesterday using out-of-date self-raising flour and the BBC Good Food recipe (and a heart-shaped cookie cutter): amazingly crumbly, light and fluffy in texture. It was the buttermilk and not over-kneading that did it. Really yummy.

As for cheese scones, I would simply follow the BBC recipe without the sugar and vanilla, add grated cheese instead and a good helping of whole-grain mustard. Maybe some finely chopped thyme. Yum!

I just mix and tip the whole lot onto a baking tray, spread out a bit and cook in one large lump. Cut into 'scones' when cool.
