Thread for us to share our culinary successes, unexpected or not.

I cooked dinner for a couple of friends today and was v pleased with how it all turned out. After Christmas stodgy I decided on a lighter menu which was:
Caramelised red onion, blue cheese and thyme quiche
Potato salad
Waldorf salad
Grated carrot and raw beet root salad
Green salad
Fresh baked rolls
Desert: roasted pineapple wedges with mint, topped with Greek yogurt and honey and pistachio nuts.

I will definitely make that again, it was delicious.

What have you cooked lately that you've been pleased with?

I made a lovely side dish to have with salmon or anything else you fancy.

Drained tin of green lentils
Strips of courgette, roasted for 15 minutes
blanched peas
crumbled feta

Dressing made with pulverised garlic, chopped mint, olive oil and lemon juice and zest.

I made salmon fishcakes for Dad and me last night - they turned out really nicely, served with salad and tomato ketchup mixed with chilli sauce.

Some lovely ideas. This thread has given me lots of inspiration.

What I did today was surprisingly delicious, and I will do it again soon - just simple pan fried fish with garlic....a cod fillet, dust with seasoned flour, pan fry in olive oil, add sliced garlic at the end. So simple and so tasty. Tasted like fish that I've had in Mediterranean restaurants on holiday...yum.
