Thread for us to share our culinary successes, unexpected or not.

I cooked dinner for a couple of friends today and was v pleased with how it all turned out. After Christmas stodgy I decided on a lighter menu which was:
Caramelised red onion, blue cheese and thyme quiche
Potato salad
Waldorf salad
Grated carrot and raw beet root salad
Green salad
Fresh baked rolls
Desert: roasted pineapple wedges with mint, topped with Greek yogurt and honey and pistachio nuts.

I will definitely make that again, it was delicious.

What have you cooked lately that you've been pleased with?

I made a baked bakewell cheesecake for entertaining over christmas and it was a huge hit. I have been having little pudding flashbacks and may have to make it again at the weekend :o

I also made a nice minted lamb stew which was a real 'throw it together and prey' type dinner but the kids polished it off and have asked when I'll be doing it again.

Wow, Bakewell cheesecake sounds amazing, I want a slice!

I did a steak and mushroom pie for tea, which was nothing special, but I love being able to make a meal that both adults, the baby and the recently less fussy four year old will all eat!

DS8 who had food ishoos helped me make a chicken stir fry on Sat, it was really plain but he added some 5 spice and ate the noodles which was a major victory Grin

I made beef stew from our left over silverside on new years eve and froze it, was a bit dubious because the beef was so lean I didn't think it would stew up very well but it was fantastic when we ate the first load tonight. The sauce was a bit runny so I added some basmati for a one-pot meal. So good and proper comforting.

Over the Xmas holidays I made meatballs in a cranberry and red wine sauce and chicken breasts stuffed with gorgonzola cheese and red peppers also in a red wine sauce.

Both were delicious.

Ooh Charlie I made a baked Bakewell cheesecake over Christmas, was yours off BBC goodfood website? Oh it was lush, am paying for the indulgence now though.
I got Jamie Oliver's budget cookbook for Christmas so we have been having lots of new things.

Best so far have been meatballs a la Norma and Pork and black bean tacos. Had no idea homemade black beans could be so tasty.

My recent unexpected success was... Brussels sprout bhajis. We had them for dinner last night with chutney and other bits and bobs. They were excellent.

It was seriously yummy. I made it in a square tin and it did 16 of us served with ice cream. Everyone's asked when I'll be making it again but I'm trying to time it for when I have visitors to share it with or else I'll eat it all.

Also, I didn't faff around with the opening the oven door and cooling stuff. I just turned the oven off and left it pretty much all day then put it in the fridge over night.

Made Chicken Katsu with homemade curry sauce the other day. And a sashimi salad- it all got hoovered up and we will be eating it again!

ohh I'd like the teriyaki beef recipe too.

Tonight was DD's day to cook and she made fishfinger pie. I was a bit Hmm but it actually tasted nice... cooked fishfingers, layer the beans on then top with mash and cheese and pop in the oven.

Sometimes you just need your food to have a hint of dirty about it :o

Not cooking but just had a nice goats cheese and beetroot salad. With a load of other salady bits and nice vinegrette dressing it was really nice
