What's your favourite meat free dinner?

DH and I would like to have a "meat free Monday" in an attempt to cut down on the amount of meat we eat but I only have a couple of veg recipes in my list of favourites. What are you favourites/recommendations? (Including websites/mags/books) Smile

Fritata with salad and skinny fries, quiche, dhal and rice, vegetable curry and rice, pasta and tomato sauce, jacket pots with beans and cheese, pasta carbonara with mushrooms and no pancetta. macaroni cheese with a salad Grin

Cheese and caramelised onion quiche.
Veg lasagne is also really good.
Felafel in pitta with houmous and couscous.
Mixed bean chilli.
I find the bbc goodfood site to be full of inspiration for tasty veg dishes!

Patatas bravas
No idea what it's called but roll out puff pastry cover with sliced tomatoes and olives olive oil and pesto sauce. Bake in hot oven.

On Sundays I make a big slowcooker pot of lentil based soup or stew, it's different every time depending on what veg etc I have. Then have it on both Sunday and Monday night with either pasta or bread. Minimal effort and tastes better on the second day.

This week it was onion, pepper, garlic, broad bean, tomato, spinach, passata and red lentil. I whack in as much frozen pre chopped veg as I can, pour a little boiling water over then leave it while we have breakfast so it defrosts first.

Bean nachos with all the extras, chilli bean stew with garlic bread on top, thai veg curry, any type of rissoto but especially pesto, mushroom pasta, aubergine bake, pizza, jacket potatoes, I love vegetarian food despite being a meat eater.

Mine is sweet potato and chick pea curry. Soooo easy to make , works well in slow cooker and is pretty cheap to. I love it

Sweet potato, chickpea and spinach curry

Veggie chilli (either with lentils or Quorn - dp and the dds announced last night that they prefer the Quorn version)

Beany tacos

Cheese and onion quiche

A pie with onions, leeks and feta in (but the dds won't eat this)

Pasta arabiatta

Dhal and rice

Tofu marinated in soya sauce, garlic, chilli and ginger (or whatever you have) fried and served on a salad, possibly with some toasted nuts. Yum.

Various curries. Dahl, lentil curry, cauliflower & potato curry, chana (lovely Caribbean/Indian chickpea curry) with rice or roti/chapati, salad, cucumber raita & mango chutney. Yum.

Thick slices of halloumi cheese roasted with peppers, red onion, courgette, butternut squash, vine tomatoes with crusty bread & a nice herby green salad.

Veggie chilli with rice

Peppers stuffed woth spicy rice & lentils (there is a good recipe on Sunday Brunch site on C4 website).

Moroccan chickpea tagine w/ cous cous

A really good omelette with homemade chips

Dahl. Mine is made with rice so meal in a bowl
Soup and bread.
Mushrooms on toast
Jacket potato with tuna etc
Pasta - with spinach Parmesan and creme fraiche etc etc
Numerous tarts made with cheese and veg eg spinach and gruyere etc etc

Ooh talking of tofu -

Press block tofu between two plates with weights on top until it goes dense and lots of the water has come out.

Mix oil and soy sauce in a bowl and dip slices of the pressed tofu in it.

Put the slices on a non-stick baking sheet and sprinkle sesame seeds over.

Bake until crunchy.

Use in stir fries, or as a side or starter, eg in Chinese pancakes with a plum or hoisin sauce. Gorgeous.

Anything out of River Cottage Veg Every Day!

I can honestly say it's changed our lives. Saved us loads of money, DH & I have both lost a bit of weight buy eating better, healthier food and even DH has to admit he's really enjoying it, having been a committed carnivore. We now only eat meat 2-3 times a week.

Last week's favourite was the Courgette Spouffle

Soup.

Roasted sweet potato (ok, not strictly a meal, but that's what I've had for tea and it was yummy.)
