What's your favourite meat free dinner?

DH and I would like to have a "meat free Monday" in an attempt to cut down on the amount of meat we eat but I only have a couple of veg recipes in my list of favourites. What are you favourites/recommendations? (Including websites/mags/books) Smile

Anything out of River Cottage Veg Every Day!

I bought this for a vegetarian friend and her committed carnivore DP. It is used loads and they've bought it for others.

I love spinach and ricotta canneloni.

this stuffed peppers recipe, but I add chilli and sometimes grate cheese on top.

I love a good ratatouille. (Do'nt have a recipe to hand, sorry)

Also the "empty the veg drawer of the fridge" stirfry! (surely everyone does this at least once a fortnight, or is it just me who doesn't always meal plan properly?)

We also have tons of recipes from HFW veg book.
Tonight I did a recipe from bbcgoodfood website- sweet potatoe fajitas- easy, tasty and healthy. I also made some potatoe wedges to have. Nice tea- kids liked too.

I like ratattouille topped with really creamy but quite solid (made with floury potatoes, butter and no milk or cream) mashed potato, baked in the oven like a shepherd's pie.

Also sweet potato chilli based on Jamie's recipe for chilli con carne - the link doesn't work but look for "Good old Chilli Con Carne" on his website under beef.

I substitute the beef with sweet potato and the balsamic with a couple of squares of good quality dark chocolate (70% or higher) and I chuck a small tin of sweetcorn in at the end too. Also his portions of spices are extremely mild, I usually add quite a bit more, but the flavour mix is excellent aside from that.

And then this is fantastic in summer - very fresh tasting and you can make it with the green leaves of the cauliflower if you wan to use them up, I actually prefer this to having it with spinach. www.bbcgoodfood.com/recipes/4287/tomato-cauliflower-and-spinach-curry

Burgers made from baked ciabatta rolls with pan-fried slices of Halloumi and fried sliced mushrooms, with some spicy tomato chutney, green salad and chunky potato wedges. Delicious!

I make a lovely red lentil and veg lasagne. You can use whatever veg you like but I normally use red pepper, courgette, spinach and mushrooms as well as onion, garlic and tomatoes. Add the lentils, herbs, salt and pepper or a stock cube. Bit of wine if you want.

Then instead of making a white sauce, mix together ricotta, cream and a beaten egg (you don't have to use the egg but it makes the sauce go further).

Mushroom lasagne is delicious. I don't have a recipe as I just make it up as I go but generally it's a big pile of mushrooms finely chopped, fry in butter with garlic and parsley. Then make lots of white sauce with whatever cheese you have. Layer it all up and bake. I often stick goats cheese, mozzarella or feta in as well if I have it.

Also I made a minestrone soup tonight, not strictly vegetarian as used the boiling liquid from a gammon as stock, but otherwise vege. Just onion, garlic, tomatoes, parsley and stock simmered for an hour, then add diced potato, dicee carrot, diced courgette, small pasta shapes and some canned beans (cannolini) and cook until all tender. Serve with lots of Parmesan on top

Broccoli orecchiette with garlic, chilli olive oil and Parmesan...this is Dh's favourite all time meal but it's carb/wheat heavy so we don't indulge very often. My favourite veggie pasta is penne arabiatta, made with a heavy dose of roasted red peppers and a blast of hot chilli.
I like South Indian currys like Thorans made with peas/cabbage/beetroot/carrots. Egg curries. Mutter paneer. Cauliflower curry.
Huevos rancheros or one of it's many variations like shakshuka for breakfast, lunch or dinner.

I don't like HFW veg book either, most of the recipes are things I've made before but the recipes I've used have been much better than his. He's particularly weak on curries. But if you are new to veggie food or don't cook much you'll probably find it a really approachable way to cooking veggie food.

Huevos rancheros by Ainsley Harriet is gorgeous. Goey egg dipping with crusty bread is essential and makes life worth living. Mmmmmmm

We very rarely eat meat. Chicken once or twice a week and red meat probably only once a month or so. Here are some of our faves:

Sweet potato and chili soup
Veggie sausages and mash
Pasta bake
Veggie curry (sometimes use quorn chicken chunks)
Pasta with black olives, chili and tomato (add anchovies if you fancy cheating)

Recipe Favs:
This Lentil Lasagne is an all time winner and appropriate as we enter the cooler months.
I love any type of bean stew and my current favourite is this butter bean, olive and cherry tomato version

Books: I'm also a fan of HFW Veg Everyday. There was a recent thread on this book- trying out the recipes and reporting back.

Delia's vegetarian collection is also nice.

I also like some veggie magazines like Vegetarian Living and the BBC Good Food tend to do a nice one at Xmas.

Also: the vegetarian society are a good source of links to blogs, recipes and other stuff.

We started at the beginning of last year with 'Meat Free Mondays' and ended up with my DD deciding to be a full-time vegetarian!

Our all time favourite veggie meal is probably chilli with wedges (and loads of sour cream in the case of my DS).

I cook things like vegetable lasagne, gardeners pie, thai stir fried vegetable, pasta bake, dhal & rice, mushroom stroganoff. I often use Rose Elliot's 30 Minute Vegetarian.

The other day we had butternut squash & coconut curry with rice which went down well with both DC. I also added some chickpeas as i though the meal could probably do with a little protein in it.

I like Jamie Oliver's rogan josh in 30 min meals - basically cauliflower and squash curry. I like the HFW book too.

I think the recipes in the HFW book are mostly very bland (his dhal recipe is an aberration). They are also over reliant on tinned tomatoes (which I hate).

I don't need recipes for things like veggie chillis, and my version is better than his anyway! There is hardly anything I want to cook from it, and the things that I have cooked have been pretty bad - the chard and potato curry was so nasty that even dp (who eats anything) wouldn't eat it.

And I really don't need a recipe for cheese on toast or egg on toast.

Am interested to know which recipes people have particularly liked from it. Tbh most of it is just too snacky and basic for my liking: I don't need recipes to shove something in a pitta bread.
