I used to bake and cook tons but recently life has got in the way so I have enjoyed a bit of pottering in the kitchen and have made
A simnel cke (1st time ever)
chocolate rice crispie /easter nests
Lemon pavlova with homemade lemon curd
And tomorrow am making a roast lamb dinner.
It's (hopefully) all going to be yummy.

Dh made a simnel cake this afternoon. It looks like a Christmas cake to me, but he says he has to decorate it with marzipan balls.

I did a roast leg of lamb with a port jus today as had friends over for lunch followed by a no bake lemon cheesecake. Am normally all over the baking malarkey but just haven't had time this year and am very jealous of these simnel cakes!

Pink I haven't baked since Christmas and didn't realise how much I missed it, btw how do you do the port jus?

I just sweated off some shallots, added in the juice and herbs from the lamb tray, poured in about 600ml port and reduced down until about half, then added some lamb stock and thickened up. Strained to make smooth and added butter for shine. Was delicious!

24hr roast pork! In the oven now. It's a whole leg from our free range pig, the first I've done. Lots of people coming to much tomorrow so it had better bloody work. Shock

For Easter Sunday lunch I'm making spanakopita, Georgian cheese bread (khachapuri), and roast leg of lamb with garlic, anchovy and oregano. I've done the lamb before but the others will be new to me - will try and do as much tonight as I can to prepare so I'm not too stressed tomorrow.

Thought I would try to make hot cross buns too but might be a step too far!!

I made these Easter muffins - dead easy, looked great and tasted really nice (f I do say so myself). Apart from that we'll be having a traditional roast lamb dinner tomorrow and perhaps a teeny tiny bit of chocolate [buwink].

i made a trifle yesterday (but no cream on it yet so I'll save it for tomoorow)
I was going to do a Baileys New York Cheesecake for Easter Sunday but it can wait till Monday (I'll bake it tomorrow to give it chill time)

Chocolate crispy nests (compulsary)

Tomorrow Quorn roast/ roast chicken dinner with all the veg and Yorkshire puddings.

Guinea-pigs get the veg trimmings so they are happy chappies (if a tad windy) [bublush] )

I've made the lemon curd pavlova too!!!! Balsamic and mint lamb chops with a pea purée to precede the pavlova. Think it might be Rococo chocolates for breakfast...
Hot cross buns - all gone, brownies are dwindling.....

Cornflake cakes and a Simnel cake. Although mine has being decorated with 12 balls because 11 is a stupid number. 10 or 12 is much neater.

My kids were desperate for a simnel cake but we're away next week so it just wouldn't get eaten - I've never made one before so it'll have to be next year's baking adventure. Smile

I'm doing butternut squash soup with garlic bread then two legs of lamb. 10 people coming - wasn't sure one would be enough, but they are massive (the lamb legs, not the relatives.) Roasting them with honey, garlic and rosemary, with roast parsnips, baby broad beans and broccoli, and peas and roasties for the DC.

My mum is making a lemon curd cake for pudding.

Can't wait to have lots of family around. Haven't seen them since Christmas.

I made a cappuccino coffee cake yesterday,my first ever cake :o ( I cook but dont bake ) Its almost all gone. I made an orange and almond tart for tomorrow,looks good but I havent tasted it yet
Lunch tomorrow is roast lamb,roasties and leeks in cheese sauce with beets( My favorite )
Ds2 is home from college and brought a friend who lives too far away to go home for a long weekend (36 hour train ride Shock ) He has requested glazed ham with cheesy mash and cabbage so it looks like Im cooking 2 easter lunches :o
