Am doing a slow roast rook with Carribean rub and a BNS + black bean jerk curry and various sides wot are forrin.

I would like coconut but am sorely afraid that it's a built marmitey and folk with have the sad rice face upon tasting.

I think it is a bit marmitey, tbh. I loved it but could understand why people wouldn't.

Thing is rice and peas would taste a bit dull without the coconut milk imo.

Well I do too. Big old bowl of rice and peas, pfft, that's a Tuesday night can't be arsed dinner isn't it, with a chop.

As you have done it before does it need the same amount of cooking time as normal basmati? Bloody good food mag has me cooking it in a pan and then transferring it to a microwave. Bugger that.

No, don't bother with the microwave bloody hell. It just takes the normal basmati time ime. I would recommend that you don't use kidney beans though - skin's too tough ime. Black eyed peas would be better.

Oh, do I need to add beans to the rice too? Black beans going into the curry.

Recipe is just softened onions in butter, rice and coconut milk.

Oh, if they are in the curry then no.

But that's what I meant about rice and peas (not birds eye green garden peas, in this context it refers to beans which go in the rice).

God I am hungry now.

Yum coconut rice. Had some in a restaurant recently and they put twiddley coconut shavings on top (was with Malaysian curry).

I don't have a recipe really.

Fry onion and garlic until soft, add a teaspoon of allspice and a chopped scotch bonnet (you can leave the chilli out). Add some thyme if you have it (I sometimes forget). A can of black eyed peas (drained). Then throw in some washed basmati, and a can of coconut milk and some water (use about 200g of rice) and cook on a low simmer until it's done. Loads of salt.

The thing is with coconut rice is that it's like stuffing, parsnip puree and cheesey mashed potato - it's the kind of thing you can eat straight out of the pan with a wooden spoon standing up by the cooker, sod everyone else.

lol at hostess trolley.

My Sindy doll had one of those. It had little silver plastic tureens filled with carrots and peas (lost by Boxing day of course).

Oh not a trolley. Am working my way up to a trolley. Really need a house with a dining room to warrant getting a trolley. No I have just a tray.
