What's for vegetarian dinner tonight?

I've just made the mix and done the tatties for this. I've made similar before but Delia's version with just red lentils. With this I didn't have enough green so added some red too, should be ok? It's all on cooking ready to assemble. There's tons of the filling though. Am making up one to freeze but think there'll be extra filling too for another pie?

So what are you making for vegetarian dinner? I've started these threads a few times and always get lots of ideas Smile

curiousmama only just saw your question. I did use shortcrust as I had some in the freezer from when I last made a pie but I thought it would work well with filo in a kind of savour strudel iyswim.

We love veggie shepardess pie in our house- always a winner.

I made sweet coconut, celeriac and chickpea curry last night and it was a hit.

Tonight will probably involve beetroot (leftover from veggie box too) so maybe a beetroot risotto (beautiful to look at as well as eat).

Mmmm that curry sounds lovely. I have some beet left in the allotment I must use up? I've been down today to do some tidying and got some leeks and turnip. And pulled up some onions to dry out. Not much left now.

We make this roasted veg and pasta dish most Saturday nights it's so simple and yum!!! I had never roasted veg before I can across this recipe Blush so the novelty hasn't worn off yet!!!

Anyone use Pinterest here? it's an online pin board where you can pin images which link to the original source from all around the web, I have a baking/ cooking inspiration board which is so useful for bringing together all the recipes I want to try from online in one spot with pictures too! Just thought some of you might find it handy! Grin

Had a disaster here tonight though. I've got a headache and period pain and didn't want to cook at all, so dp said he would. But then I didn't want what he was going to cook, so I made a curry. But because I've got a headache I dug around and found a jar of balti sauce (usually use paste or do from scratch) so I made it with that and then didn't like it and didn't eat it. So everybody else has had a veggie curry but I have had a bowl of cornflakes.

And so now my headache is worse. :(

well tonight we had spelt risotto woth roasted pumpkin, toasted pumpkin seeds and drizzled with pumpkin oil.

was quite nice.

Sorry about your disaster Remus I know you're a good cook so it must be annoying for you? You've told us of some fantastic dishes on these threads before. I hope you have a nice din tomorrow to make up for it?

We had a split dinner tonight - dd had tagliatelle with hidden veg sauce and mozzarella, DS had pesto and a fit that I'd dared to put some 'orange sauce' pm his plate and I then used aforementioned hidden veg sauce in aubergine parmigiana which DH and I had with chips. Grin

Aubergine, food of the gods, brings my kids out in a rash.

Veggie fajitas tonight. With very extravagant king oyster mushrooms. They're huge & very meaty, so DH was extra pleased.

It's strange what we can be allergic/intolerant to. I used to eat bananas regularly then recently became allergic, tight throat the lot!

ivykaty that looks good and it's handy that you can do it the day before.

They were in the fajitas. Sliced & fried with the other veg. Really nice texture though. DH can be a bit sniffy about meatless meals, but this went down v well.

This spaghetti bake is in the oven now with a loaf of garlic bread! It's very simple, nothing fancy and doesn't look elegant but it tastes so good and wholesome! We use puy lentils in ours and they really make a difference! BTW, this sauce freezes very well do I make or in large batches! Grin

I'm making a roast dinner tonight that is completely vegetarian/vegan, probably going to do a nut roast, my inspiration comes from here: heavenlyveganbaking.wordpress.com/2013/03/24/sunday-dinner/ and i'll probably make one of their yummy looking cakes/cookies too
