What's for vegetarian dinner tonight?

I've just made the mix and done the tatties for this. I've made similar before but Delia's version with just red lentils. With this I didn't have enough green so added some red too, should be ok? It's all on cooking ready to assemble. There's tons of the filling though. Am making up one to freeze but think there'll be extra filling too for another pie?

So what are you making for vegetarian dinner? I've started these threads a few times and always get lots of ideas Smile

Leek, cavelo nero and butter bean pasta bake (with cream cheese stirred through and tomato sauce on top). I've had seconds but want more!

Some lovely ideas here, a bit more inspiring than my veggie sausages and balsamic tomatoes and peppers in a part baked roll! I'm marking my place on here for ideas for later in the week.

Yes it is in the book, he serves it with a coleslaw but I didn't have the stuff for that.

We had oven roasted veg frittata with rocket salad & crispy kale "seaweed". Yum (DH cooked, so I can say that without boasting Smile )

We had veggie pasties tonight. Butternut squash roast in olive oil, cumin and chilli, mixed with paneer, sweetcorn, peas and coriander made into pasties. Was lovely. We had frittatta last night. Just realised we've gadgets 2 veggie meals in a row and Dp hasn't noticed!

It's veggie November here (as I can't grow a good mustache!) and we had red peppers stuffed with a mix of couscous, spinach, mushrooms and cheddar with more grated cheddar on top (where the hole is) and roasted. I would have made it with feta instead of cheddar but didn't have time to pop to the shop.

Also thinking about it now, it might have been better if I had sliced them in half, then filled them, they might have cooked quicker and more evenly.

Kids and DH loved it! Will look on this thread for ideas for the rest of the month. We did Vegember last year as well and it made us try lots of different dishes and we really cut down our meat consumption since then.

EnglishGA those pasties sound nice. Is the paneer griddled first or made like mash, I haven't used it yet? Did you make that recipe up?

Its griddled then mixed with cubes of butternut squash and the other bits. In my head I was aiming for the spice of a Samosa but in a greedy person pasty Grin I did it with squash rather than potato because I'm weaning Ds and he likes squash so he had a bowl of the filling before I put salt in it.

I'm lazy so always aim to kill 2 birds with one stone :)

I make this regularly and have never added the cider and don't substitute it with extra stock either?!? The consistency is just perfect as it is! It freezes beautifully too, and that mash is out of this world!!! Grin

lolalotta Yes you need to do a double then you put the link, then you put the text you want to appear instead, then you close your There is also an example at the bottom underneath the box where you write the message (if you're on a browser and not on the phone app).

Am loving the veggie November idea CantStopEatingCheese. Maybe i could get the whole family to do that.

It's only DD who's a full time veggie in our hose but more often it's easier to cook one meal than wo so we're all drifting that way.

Um the pasta bake...I just made it up.
I cooked up some sliced leeks in a bit of oil, then added some shredded cavalo nero and a bit of water and cooked it with the lid on. Then I added butter beans.
At the same time I fried some onion and then added a tin of tomatoes and some tomato puree and cooked that down.
I also cooked a pan of pasta.
I stirred some cream cheese into the cooked pasta, then added it to the leek/cavalo/beans and poured the tomato sauce on top.
It then sat waiting until about 15 mins before dinner, when I shoved it in the oven.
