In a fit of deluded domestic/nesting, I bought these mini pie moulds.
They arrived yesterday and I opened then with glee and then thought: 'Uhhuh.' as my mind went totally blank.

Now, what are your favourite pie fillings? I was envisioning slow-cooking some stewing steak with bits of potato and peas and lots of gravy, but I'd love more ideas for fillings. Cheese and onion? Leek and chicken? Tell me all about your autumn/winter pie favourites and I will report back on my pie-progress (and increasing waistline!) :)

I made a bacon and leek pie this week, which I just sort of made up as I went along, after getting the idea online.

I had a black pudding and paprika sausage roll the other week from the artisan bakery in town.
It was delicious, I might work with that as an idea for a pie.

No, I would like the Hairy Bikers pie book though.
I've only just bought the pie dish, and haven't really made many.
I've done a spanokopita, indian potato filo pie and steak pie, as well as the one I mentioned.

I LOVE pieee... it's my favourite treat over anything! 3 cheese & onion (no potato) is my current number 1.. but pretty sure that will change to chicken, leek & bacon / steak when the winter comes... my family are crazy good cooks (typical farm wife english type cooks) and we get brought pies round every week! haha! little bit obsessed

i wouldn't say i have a recipe as such but basics softened finely chopped onions (red/white/spring/mixed), three kinds of cheese (whatever you fancy.. i tend to swap and change.. parmesan works well as do strong cheeses) mix with cooked onions, salt, pepper, worchester sauce, 1 egg (maybe 2 depending on size of pie) no real quantities sorry but yeah just experiment each time really however sure somewhere on the www there will be a recipe :)

My favourite by far is feta and courgette pie. Softened onions, veg stock, risotto rice, grated courgette, feta, couple of eggs, chopped mint. Bloody lovely.

If you're a corned beef fan, you can fill pies with tater hash (fry an onion til soft, add a tin of corned beef, cubed, peeled cubed potato, couple of beef oxo, squirt of tomato puree, some pepper but no salt, water to cover, boil then simmer for an hour - it goes thick, perfect for a pie/pasty filling)

My favourite sweet pie filling is apple with cinnamon, baking apples are the best to use, with some sugar on top. You can sprinkle the top of the glazed pie with sugar too, just watch the oven isn't on too hot or the sugar can catch and turn sticky and black. You can add other fruit to the apple, for example raisins, chopped dates, blackberries (lots around right now) raspberries, dried apricots (you can soak them in some juice for a while if you like to plump them up) rhubarb, gooseberries, etc

I am checking this thread at work and drooling on the keyboard - definitely looking odd.... ommmnnnn I am going to try the feta and courgette pie tonight, and then definitely something fruity, I've got some blackberries in the freezer and lots of apples. Oddly, America doesn't seem to 'do' cooking apples (soo weird, right?) but I can experiment with varieties...

This was the chicken and black pudding pie recipe we used. I had some Stornoway black pudding (the best in the world) and went hunting for a recipe. We ignored some of the recipe (chopping leeks a certain way makes people think it's hair? who knew Hmm).

we've made if twice, the second time without bacon, Still nice, but better with the bacon.

favourite savoury pie is spinach and feta with chilli and sundried tomatoes. Heaven. Best with puff or filo pastry.

Spinach and feta is becoming a hit in this house - definitely agree about the puff pastry.

Pie molds rather disappointing: the shape disappears in the oven and it ends up looking like a flying saucer. Tasty pie, but not enough filling between the pastry layers. Happy to return to basic in-a-dish pies, though, now I've got back in the pie groove!

GBBO did a chicken, bacon and apricot handraised pie this week....dh has begged me to make it!

Pie favourites here are beef and ale, lots of lovely onions and carrots with the beef, preferably cooked the day before in the slow pot

and runner up is chicken and stilton, no one really like stilton at all, which i discovered post christmas early in our marriage but in a pie dh cannot get enough! :D So i buy odd bits in the reduced and make pies! :D
