What's your favourite omelette recipe?

Mine's bacon, sausage, onion, peppers, cheese and tomato or smoked salmon, onion, tomato, peppers, asparagus, spinach and cream cheese. Both with tonnes of freshly ground black pepper. YUM!

Wow those are loaded omelettes - how many eggs do you use?? We tend to stick to:

  • mixed green herbs (tarragon, parsley, chives)
  • ham, cheese, mushroom
  • cheese, peppers, onions
  • goat's cheese, spinach
  • bacon, leeks, cheese
  • mexican huevos rancheros style (refried beans, peppers, cheese and topped with salsa and avocado)

Never been a fan of tomatoes in omelettes as they make everything too wet for me.

Same, 2-3 eggs depending on size. I asked because I was impressed you manage to fit so many things onto each omelette! Any more than three fillings and mine just refuse to close properly.

Had a delicious herby one today - lots of leftover dill, coriander and a bit of mint. Lovely.

Also like grated courgette, spinach and goats cheese

Ratatouille is a really good stuffing

And then loosely Indian style - some soft onions, chilli, coriander, mushrooms, spinach

Pesto omlette (I'm never quite sure if this is a joke)

Make a lot of little thin one egg omlettes. Spread pesto thinly on them. Roll them up. Eat cold or warm. :)

Do you all scramble yours about in the pan, or do they sit there? My mums always looked like a rubber round mat. Didn't taste much better either.

Yes, I rough them up a bit in the middle :o and let the liquid run around and fill the gaps. You get a lot more omelette for your money that way, and lots of crevices for the fillings to nestle in.

I like jam ones, but not too much or they're too sweet. Think that strawberry jam is my favourite - stops it being too 'eggy' halfway through.

The last omelettes I made were really good, considering they were created on a narrowboat with slightly random ingredients. We didn't have any tomato ketchup and DH is fussy about eggs, wasn't sure if he'd be able to eat it without. But we did have a jar of Tescos pasta sauce - one with pancetta in it.

So - first sauteed some onion. Put aside, make 2-egg omelette as specified by Percy. big dollop of the sauce, spoonful of onions, lots of cheese (pregrated extra mature. Well I was on holiday). Absolutely delicious!

Soufle omelettes. You beat the whites to a soft peak, fold in the yolk and put in the pan. Add some cheese and when the bottom is done put the pan under the grill to cook the top.
