What's your favourite omelette recipe?

Mine's bacon, sausage, onion, peppers, cheese and tomato or smoked salmon, onion, tomato, peppers, asparagus, spinach and cream cheese. Both with tonnes of freshly ground black pepper. YUM!

My favourite is with just chives. Lovely.

Onion, smoked bacon and blue cheese.

Peppers, onion, mushroom, cheese and peas.

With lots of black pepper!

I'm just going out to pick some chives to try KickingK's omelette .

I can report that the chive omelette was a great success!

Am off to make a cheese and chive one. Maybe a few mushrooms too.

Spaghetti omelette.

Bung left over spaghetti bolognaise in. Yum yum.

If you haven't got leftovers you can use spaghetti hoops. The DCs love it.

Mmmm spag bol omelette sounds good.

Bet a chilli con carne one would be too.

Nutella omelettes I have tried, and i thought they were disgusting.

How can you break a guideline on a thread about omelettes?

Today sauteed some halved cherry tomatoes in butter, then made omelette with these plus black pepper, fresh chives and basil and cheese. And some tomato K in there too. Can't have omelette without some sort of tomato sauce, that's probably why nutella would be disgusting

Dh suggested this version yesterday when I realised I had bought 4 punnets of cherry toms on consecutive days without eating any...

Trying to do slimming world hence the oil spray - spray pan and sear halved cherry toms, add drop of balsamic vinegar and put on warm plate. Make french style omelette with 3 eggs, pepper, chopped feta cheese stirred in, and fill with the toms and chopped basil.

Serve with oil-spray fried bashed up new potatoes. Would have been even better with a chopped spring onion in the toms too.

I like mine with chillies, red onion and tomatoes with the juice bit removed.
